1 pound lean ground sirloin
4 teaspoons minced garlic (4 cloves)
1 tablespoon dried oregano
1/4 teaspoon crushed red pepper flakes
1 1/4 cups dry red wine, divided
1 (28-ounce) can crushed tomatoes, preferably San Marzano
2 tablespoons tomato paste
Kosher salt and freshly ground black pepper
3/4 pound dried pasta, such as orecchiette or small shells
1/4 teaspoon ground nutmeg
1/4 cup chopped fresh basil leaves, lightly packed
1/4 cup heavy cream
1/2 cup freshly grated Parmesan cheese, plus extra for serving

Steps:

  • Heat 2 tablespoons of olive oil in a large (12-inch) skillet over medium-high heat. Add the ground sirloin and cook, crumbling the meat with a wooden spoon, for 5 to 7 minutes, until the meat has lost its pink color and has started to brown. Stir in the garlic, oregano, and red pepper flakes and cook for 1 more minute. Pour 1 cup of the wine into the skillet and stir to scrape up any browned bits. Add the tomatoes, tomato paste, 1 tablespoon salt, and 1 1/2 teaspoons pepper, stirring until combined. Bring to a boil, lower the heat, and simmer for 10 minutes.
  • Meanwhile, bring a large pot of water to a boil, add a tablespoon of salt, a splash of oil, and the pasta, and cook according to the directions on the box.
  • While the pasta cooks, finish the sauce. Add the nutmeg, basil, cream, and the remaining 1/4 cup wine to the sauce and simmer for 8 to 10 minutes, stirring occasionally until thickened. When the pasta is cooked, drain and pour into a large serving bowl. Add the sauce and 1/2 cup Parmesan and toss well. Serve hot with Parmesan on the side.

2 tbsp olive oil
2 onions, finely chopped
1 large carrot, finely chopped
2 sticks celery, finely chopped
500g/1lb 2oz lean minced pork
500g/1lb 2oz beef mince
3 garlic cloves, crushed
3 tbsp sun-dried tomato paste
150ml/5fl oz white wine
500g/1lb 2oz passata
400g tin chopped tomatoes
200ml/7fl oz beef stock
3 bay leaves
2 tbsp chopped thyme leaves
4 tbsp double cream
salt and freshly ground black pepper
450g/1lb pappardelle pasta, to serve
Parmesan, to serve
basil leaves, to garnish

Steps:

  • Preheat the oven to 160C/140C Fan/Gas 3.
  • Heat the oil in a deep, lidded ovenproof casserole. Add the onion, carrot and celery and fry over a high heat for 5-6 minutes, or until starting to soften. Add the pork and beef mince and fry until browned and any excess liquid has evaporated. Add the garlic and fry for 30 seconds.
  • Add the tomato paste and stir. Add the passata, tomatoes, stock, herbs and wine. Season with salt and pepper and bring to the boil, cover and bake for about an hour.
  • Stir in the cream, and return to the oven, with the lid off, for another hour, until tender and reduced.
  • Bring a pot of salted water to the boil, add the pasta and cook according to packet instructions. Drain and check the seasoning.
  • Divide the pasta between plates, top with the sauce, grate over some Parmesan, garnish with basil leaves and serve.

SUNNY'S QUICK BOLOGNESE WITH PAPPARDELLE



Sunny's Quick Bolognese with Pappardelle image

One 16-ounce bag frozen flame-grilled beef and onion patties, thawed (I like Ballpark)
1 cup pizza sauce
1/2 cup chicken stock
1/2 cup heavy cream
Pinch of nutmeg
1 pound fresh pappardelle
Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil.
  • Using your hands or a knife, break or cut the beef patties into pea-size pieces.
  • In a large straight-sided skillet, combine the pizza sauce, chicken stock, heavy cream, nutmeg and beef over medium-high heat. Season with just a bit of salt and a few grinds of black pepper. Bring to a simmer and cook until heated through, 2 to 3 minutes.

½ cup butter
1 cup minced onion
½ cup minced celery
¼ cup minced carrot
1 pound ground veal
1 pound ground pork

2 cups beef broth

Steps:

1 medium yellow onion, finely chopped

Steps:

  • Add crushed tomatoes, stirring to scrape up any bits on the bottom of the pot. Fill the tomato can halfway with water and swirl around to get all the remaining tomato, then add to the pot. Season with salt and pepper and bring to a simmer. Reduce heat to medium-low and continue to cook until sauce is thickened and insanely flavorful, 25 to 30 minutes.
  • Serve sauce mixed into and over pasta with plenty of cheese for grating over the top, scattered with a small handful of marjoram, oregano or thyme leaves if you like.
