QUICK REFRIGERATOR STRAWBERRY JAM

Yield 1 1.2 pints

Number Of Ingredients 3

1 qt ripe, organic strawberries, hulled and sliced
3⁄4 to 1 cup raw organic sugar (or substitute regular granulated sugar), depending on the sweetness of the berries
2 tbsp lemon juice

Steps:

  • Combine the strawberries, sugar and lemon juice in a small saucepan over medium heat. Bring the strawberry mixture to a rolling boil, stirring frequently with a wooden spoon and mashing the strawberries slightly (I used a potato masher for this). Turn down the heat to medium-low and simmer for approximately 10 minutes. Put about a teaspoon of the jam mixture on the a plate and swirl the plate around. If the jam runs, cook for 2-5 minutes longer and repeat the process. (The jam should firm up when it hits the cold plate and should no longer run.) Transfer to clean glass jars and cool. When completely cool, cover and refrigerate. Makes about 1 1⁄2 pints.

Tips:

  • Use ripe, fresh strawberries: The quality of your strawberries will greatly impact the final product, so make sure to use the best ones you can find.
  • Macerate the strawberries with sugar: This step helps to draw out the juices from the strawberries and results in a more flavorful jam.
  • Use a large pot: The jam will expand as it cooks, so make sure to use a pot that is large enough to accommodate it.
  • Stir the jam frequently: This will help to prevent it from sticking to the bottom of the pot and burning.
  • Test the jam for doneness: The jam is done when it reaches a temperature of 220 degrees Fahrenheit or when a dollop of it placed on a chilled plate wrinkles when you push your finger through it.
  • Let the jam cool completely: This will help it to thicken and develop its full flavor.
  • Store the jam in a clean jar: Once the jam has cooled, transfer it to a clean jar and seal it tightly. The jam can be stored in the refrigerator for up to 3 weeks or in the freezer for up to 1 year.

Conclusion:

Strawberry jam is a delicious and versatile condiment that can be enjoyed on toast, pancakes, waffles, or even ice cream. It is also a great way to preserve strawberries when they are in season. With a few simple ingredients and a little bit of time, you can easily make your own strawberry jam at home. So next time you have a batch of ripe strawberries, give this recipe a try!
