ZUCCHINI CHOCOLATE CHIP COOKIES
I love using zucchini in the summertime. This recipe reminds me of a zucchini bread my aunt makes, but I wanted to make cookies for a family get-together because they would be easier to grab and eat. These taste better if you make them the day before. -Melissa Obernesser, Oriskany, New York

Tips:
- Opt for medium-sized zucchini: Larger zucchini tend to have more seeds and a higher water content, which can affect the texture and taste of the cookies.
- Grate the zucchini finely: This will help the zucchini blend seamlessly into the cookie dough and prevent large chunks from being noticeable.
- Use a food processor for quick and even grating: If you don't have a food processor, use the smallest holes on a box grater.
- Squeeze out excess moisture from the grated zucchini: This will ensure the cookies have the right consistency and won't be too wet.
- Don't overmix the cookie dough: Overworking the dough can result in tough cookies. Mix only until the ingredients are well combined.
- Chill the dough before baking: This helps the cookies hold their shape and prevents them from spreading too much in the oven.
- Bake the cookies until the edges are golden brown: This is a good indication that the cookies are done. Overbaking can dry them out.
- Let the cookies cool completely before serving: This will give them a chance to firm up and develop their full flavor.
