Sage and Pumpkin add the flavors of fall to this hearty pasta dish, which gets a kick from a dash of hot pepper sauce. I personally add browned sweet sausage to this.

Tips:

  • Choose the right pumpkin: Use a sugar pumpkin or pie pumpkin for the best flavor and texture. These pumpkins are small and have a sweet, dense flesh that is perfect for pasta.
  • Roast the pumpkin before using it: Roasting the pumpkin brings out its natural sweetness and flavor. You can roast the pumpkin in the oven or on a grill.
  • Use a good quality pasta: Use a high-quality pasta made with durum wheat for the best results. Durum wheat pasta has a higher protein content and holds its shape better than other types of pasta.
  • Cook the pasta al dente: Cook the pasta according to the package directions, but don't overcook it. Al dente pasta is slightly firm to the bite and has a better texture and flavor.
  • Use a flavorful sauce: The sauce is what really makes this dish special. Use a sauce made with fresh ingredients and plenty of spices. You can use a traditional tomato sauce, a creamy sauce, or a pesto sauce.

Conclusion:

Rachael Ray's Penne Wise Pumpkin Pasta is a delicious and easy-to-make dish that is perfect for a fall meal. The roasted pumpkin adds a sweet and savory flavor to the dish, and the creamy sauce is rich and flavorful. This dish is sure to be a hit with your family and friends.
