¼ cup olive oil, divided
½ carrot, minced
½ stalk celery, minced
2 tablespoons minced onion
¾ cup Arborio rice
2 tablespoons red wine
1 head radicchio, thinly sliced

⅓ cup chopped walnuts
2 tablespoons balsamic glaze (reduced balsamic vinegar)

Steps:

  • Bring vegetable stock to a boil in a saucepan; reduce heat to low and keep simmering.
  • Heat 2 tablespoons olive oil in a stockpot over medium heat; cook and stir carrot, celery, and onion until onion is translucent, about 2 minutes. Add remaining 2 tablespoons olive oil; stir in rice. Cook and stir until rice is coated with oil and warm, 1 to 2 minutes. Pour in red wine and stir until rice is coated and wine is absorbed, 2 to 3 minutes.

1 tablespoon olive oil
1/3 cup chopped shallots
1 large head radicchio, halved, thinly sliced
1 cup arborio rice or medium-grain white rice
1/2 cup dry red wine
1/3 cup freshly grated Parmesan cheese
2 tablespoons (1/4 stick) butter

Steps:

  • Bring 3 1/2 cups broth to simmer in medium saucepan. Reduce heat to low; keep broth warm. Heat oil in large saucepan over medium-high. Add shallots; sauté until golden, about 3 minutes.   • Bring 5 cups stock to simmer in heavy medium saucepan over medium high heat. Reduce heat to low; keep stock hot.

1 small onion, chopped
4 tablespoons unsalted butter
1 1/2 cups Italian Arborio rice
1 cup finely chopped raddichio leaves
1 cup dry light Italian white wine
4 to 6 cups homemade chicken stock
Coarse salt and freshly ground pepper to taste
1/4 cup heavy cream
1/3 to 1/2 cup freshly grated Parmesan cheese

Steps:

  • In a large heavy saucepan or skillet, soften the onion in the butter. Add the rice and cook over fairly high heat, stirring constantly, until the grains turn opaque.
  • Add the raddichio leaves, saute for one minute, then pour in the wine. Stir the rice well to prevent it from sticking to the bottom of the pan. When the liquid has evaporated, add a ladleful of hot broth. Repeat this procedure until the rice is almost tender but firm. If you run out of stock, add warm water instead.
  • Turn off the heat, add cream and season the risotto with salt, pepper and Parmesan cheese to taste. Serve immediately, with more cheese to pass separately at the table.

2 tablespoons salt
1 pound small rock shrimp
1 medium-size head of radicchio, halved and cored
5 tablespoons unsalted butter
4 cups chicken stock
1 cup dry white wine, added to the stock
2 tablespoons olive oil
1 small yellow onion, chopped
1 cup Arborio rice
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees. In a bowl, dissolve the salt in 2 cups of water, add the shrimp and soak for 30 minutes. Drain and rinse in cold running water.
  • Place the radicchio halves in a pan just large enough to hold them. Put a tablespoon of butter on each half and roast, basting frequently for 40 minutes. Cool; slice thinly.
  • Warm the stock in a pot over low heat. With the oil and remaining butter, saute the onion until softened in a large pan. Add the rice to the pan and stir for 2 minutes.
  • Add 1/2 cup of the stock and gently stir over medium heat until it is mostly absorbed. Continue with the remaining liquid, adding 1/2 cup at a time as the rice dries, stirring and scraping the rice off the bottom and sides of the pot.
  • When 1 cup of the stock remains, add half of it, along with the radicchio; stir 2 minutes. Pour in the remaining stock and stir briefly. Smooth the top of the rice and place the raw shrimp on top. Add the salt and pepper to taste.
  • Cover the pot. Over low heat, steam until the shrimp are done, about 5 minutes. Remove the pot from the heat; stir. Serve, adjusting the salt and pepper to taste.

2 quarts well seasoned chicken or vegetable stock, as needed
2 tablespoons extra virgin olive oil
1/2 cup minced onion
1 1/2 cups arborio or carnaroli rice
1 to 2 garlic cloves (to taste), green shoots removed, minced
Freshly ground pepper to taste
1/2 cup red wine or dry white wine, such as pinot grigio or sauvignon blanc
2 medium heads radicchio or 4 or 5 purple Belgian endives, quartered, cored and cut crosswise in thin slivers
1/2 cup freshly grated Parmesan cheese (2 ounces)
2 tablespoons minced flat-leaf parsley

Steps:

  • Put your stock or broth into a saucepan, and bring it to a simmer over low heat with a ladle nearby or in the pot. Make sure that it is well seasoned.
  • Heat the olive oil over medium heat in a wide, heavy skillet or in a large, wide saucepan. Add the onion and a generous pinch of salt, and cook gently until it is just tender, about three minutes. Do not brown.
  • Add the rice and the garlic, and stir until the grains separate and begin to crackle. Add the wine, and stir until it has been absorbed. Begin adding the simmering stock, a couple of ladlefuls (about 1/2 cup) at a time. The stock should just cover the rice and should be bubbling, not too slowly but not too quickly. Cook, stirring often, until it is just about absorbed. Add another ladleful or two of the stock, and continue to cook in this fashion, stirring in more stock when the rice is almost dry. You do not have to stir constantly, but stir often. After 10 minutes, stir in the radicchio or endive, and continue to cook in the same fashion until the rice is tender all the way through but still chewy, about 15 minutes. Taste now and adjust seasoning, adding salt and pepper to taste. Add another ladleful of stock to the rice, along with the Parmesan and the parsley, and remove from the heat. The mixture should be creamy (add more stock if it isn't). Stir for about half a minute, then serve in wide soup bowls or on plates, spreading the risotto in a thin layer rather than a mound.

1 medium onion, chopped, plus 1 small onion finely chopped
2 ribs celery, chopped
1 tomato, quartered
1 pound shrimp, cooked, shelled and deveined; shells reserved
1 pound fish bones
1 1/3 cups white wine
8 cups water
6 tablespoons unsalted butter
1 1/2 cups Arborio rice
12 large radicchio leaves, coarsely chopped
1 tablespoon brandy
Salt and freshly ground pepper to taste
1 tablespoon chopped Italian parsley

Steps:

  • In a large pot, heat the oil, add the medium onion and saute 5 minutes. Add the celery and tomato and saute 2 minutes. Add the shrimp shells, fish bones, 1 cup wine and water and bring to a boil. Simmer for 20 minutes; strain. Place broth in a saucepan and keep at a bare simmer.
  • In a large, heavy saucepan, melt 4 tablespoons butter over medium-low heat. Add small onion and cook until translucent, about 7 minutes. Add the rice and cook, stirring, for 5 minutes. Stir in 1/3 cup wine, then 1/2 cup broth. Cook 3 minutes. Stir in radicchio.
  • Add broth 1/2 cup at a time, stirring constantly and adding more broth as it is absorbed by the rice. Adjust heat so rice and broth cook at a steady simmer. After about 15 minutes, the rice should be somewhat tender and some broth should be left. Stir in all but 4 shrimp.
  • Cook another few minutes, adding broth as needed, until rice is al dente. Stir in brandy and 2 tablespoons butter. Season with salt and pepper. Garnish with shrimp and parsley; serve immediately.

8 ounces shallots (whole)
3 tablespoons olive oil
kosher salt & fresh ground pepper
1 tablespoon unsalted butter
1/2 lb fresh portabella mushroom, diced (about 2 cups)
1/2 cup yellow onion, chopped
1 1/2 cups arborio rice
1 tablespoon fresh thyme, chopped
1/2 cup white wine
4 -5 cups hot chicken stock
1 3/4 cups radicchio, chopped and loosely packed
1 cup tomatoes, seeded and chopped
3/4 cup parmesan cheese, grated
chives, minced, for garnish

Steps:

  • Preheat oven to 350. Trim ends of shallots. Peel off outer brown layer and cut in half. Coat with 1T olive oil and sprnkle lightly with salt and pepper.
  • Wrap shallots in foil and roast for 65 minutes. Keep wrapped in foil until ready to serve.
  • In large saute pan over medium heat, heat remaining oil and butter. Add mushrooms and onions and saute for 2-3 minutes, stirring frequently.
  • Add rice and thyme and continue cooking for 4-5 minutes, stirring frequently.
  • Carefully add wine (it will steam up when poured into pan!) and simmer to evaporate. Start adding stock in 1/2 cup increments and slowly stir until mostly evaporated.
  • Cook until al dente.
  • Stir in radicchio and tomatoes.
  • Cook for 1-2 minutes more to wilt radicchio slightly.
  • Stir in parmesan.
  • Serve very hot, harnished with shallots and minced chives.

Tips for Making a Perfect Radicchio Risotto

  • Use fresh radicchio. The fresher the radicchio, the better the flavor of the risotto. Look for heads of radicchio that are firm and have deep red leaves.
