2 tablespoons minced shallot
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup white-wine vinegar
1/3 cup extra-virgin olive oil
For salad

4 medium radishes, trimmed and thinly sliced
3 tablespoons chopped fresh chives

  • Whisk together mustard, shallot, sugar, salt, pepper, and vinegar in a small bowl, then add oil in a slow stream, whisking until emulsified.
  • Just before serving, toss salad ingredients with just enough vinaigrette to coat and season with salt and pepper.

Tips for Making the Perfect Radish Vinaigrette:

  • Choose the right radishes. Use fresh, crisp radishes with a mild flavor. Avoid radishes that are woody or have a strong peppery taste.
  • Slice the radishes thinly. This will help them absorb the dressing and make them more tender.
  • Use a good quality olive oil. The olive oil is the base of the dressing, so it's important to use a good quality oil that has a fruity flavor.
  • Add a little bit of acidity. This could be in the form of lemon juice, vinegar, or white wine. The acidity will help to balance out the sweetness of the radishes.
  • Season the dressing to taste. Add salt and pepper to taste, and adjust the other ingredients as needed.
  • Let the dressing marinate for a while. This will allow the flavors to meld together and develop.
  • Use the dressing on salads, roasted vegetables, or grilled meats. It's also great as a dipping sauce for crudités.

Conclusion:

Radish vinaigrette is a versatile and delicious dressing that can be used on a variety of dishes. It's easy to make and can be tailored to your own taste preferences. With its bright and peppery flavor, radish vinaigrette is sure to add a touch of freshness and zing to your next meal.
