MOLASSES BARS

Molasses Bars image

These are my Grandma Marion's Molasses Bars, also known as hermit bars. Chewy, delicious sweet bars for the molasses lovers!

Provided by Karlynn Johnston

Categories     Dessert

Number Of Ingredients 11

1 1/2 cups of white sugar
1/2 cup brown sugar
1 cup and 2 tablespoons of margarine (or butter)
2 small eggs
1 1/2 cups of raisins
1/2 cup of molasses
3 1/4 cups of flour
2 teaspoons rounded baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
dash of allspice

Steps:

  • Kick the tires and light the fires to 375 °F.
  • Cream the sugars and the margarine together. Add in your two eggs and beat in completely.
  • Add in the molasses to the margarine/sugar mix and mix in thoroughly.
  • Whisk together the dry ingredients.
  • Combine the wet and dry and mix well. Then add in your raisins.
  • Divide the dough into two pieces, and from each half form three long rolls on a cookie sheet.
  • Build them up as high as you can and they fit across a baking sheet, width-wise. When you build them up, you get a thicker, chewier bar.
  • Bake them in the oven at 375 for 13-15 minutes, and do not over/under bake. This from my grandma's instructions. So they need to be baked until the edges are cooked and the middle slightly still underdone.
  • Slice them across into about 8-10 squares when they are fully cooled, needless to say, this recipe makes a large amount, you can end up with 40-60 of the little bars!

Yield Makes about 3 dozen

Number Of Ingredients 13

Unsalted butter, softened, for baking sheet
2 cups raisins (about 13 ounces)
1 cup sugar
1 teaspoon cornstarch
1/2 cup apple cider
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons coarse salt
1 1/4 cups vegetable shortening
1 1/4 cups packed light-brown sugar
1 large egg
1 1/4 teaspoons pure vanilla extract
2 1/2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees. Butter a 10-by-15-inch rimmed baking sheet. Line bottom with parchment paper, and butter parchment; set sheet aside.
  • Make filling: Pulse raisins and sugar in a food processor until almost pureed. Transfer to a saucepan. Whisk cornstarch into 1 cup cold water; whisk into raisin mixture. Stir in cider. Simmer over medium-low heat, stirring occasionally, until mixture thickens and sugar has dissolved, about 6 minutes.Let cool completely.
  • Make dough: Whisk together flour, baking soda, and salt in a medium bowl; set aside. Put shortening in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Add brown sugar, and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Mix in oats.
  • Press half the dough into prepared baking sheet. Spread raisin filling evenly over top of dough. Crumble remaining dough on top of filling using your fingers, gently pressing down so that topping covers filling. Bake, rotating sheet halfway through, until top is golden brown, about 35 minutes. Let cool completely in sheet on a wire rack. Cut into 2-inchsquares. Bars can be stored between layers of parchment in airtight containers at room temperature up to 5 days.

RAISIN MOLASSES BARS

Raisin Molasses Bars image

I've been going through a lot of old family recipes, and recipes I collected back when I was a young bride and new mother. Most of them were for baked goods. Here is another one - from a bygone era. Not sure where I got it, but we've enjoyed these bars a few times over the years.

Provided by Susan Feliciano @frenchtutor

Categories     Cookies

Number Of Ingredients 18

6 tablespoon(s) butter
1/3 cup(s) sugar
2/3 cup(s) molasses or sorghum
1 - slightly beaten egg
1 teaspoon(s) vanilla
1 cup(s) white whole wheat four
1/8 teaspoon(s) each salt and baking soda
1 teaspoon(s) cinnamon
1/8 teaspoon(s) each cloves and ginger
1 cup(s) raisins
3/4 cup(s) chopped walnuts (optional)
TOPPING
2 teaspoon(s) cinnamon
1/3 cup(s) sugar
OR, USE LEMON GLAZE:
2/3 cup(s) confectioners sugar
1/8 cup(s) lemon juice
1/2 teaspoon(s) vanilla

Steps:

  • Melt butter and cool slightly. Stir in sugar, molasses, egg, and vanilla.
  • Sift together the flour, salt, baking soda, cinnamon, cloves, and ginger. Stir the raisins and nuts (if used) into the flour to coat well.
  • Combine dry ingredients with the sugar mixture until well blended. Pour into a greased 15 x 10 x 1-inch cookie or jelly roll pan. Bake at 375 degrees for about 12-13 minutes.
  • Cut the cake into bars when cool and dust with the cinnamon-sugar topping. *OR, top with the lemon glaze: Stir together, adjusting sugar or juice to desired consistency.

Tips:

  • Use fresh ingredients. This will make a big difference in the flavor and texture of the bars.
  • Don't overmix the dough. Overmixing will make the bars tough.
  • Chill the dough before baking. This will help the bars to hold their shape.
  • Bake the bars until they are golden brown. Overbaking will make them dry.
  • Let the bars cool completely before cutting them. This will help to prevent them from crumbling.

Conclusion:

Raisin molasses bars are a delicious and easy-to-make treat. They are perfect for any occasion, from a casual snack to a special dessert. With a few simple tips, you can make sure that your raisin molasses bars turn out perfect every time. So next time you are looking for a sweet and satisfying treat, give raisin molasses bars a try.
