Time 3h55m

Yield 6 servings

Number Of Ingredients 26

4 cups Beef Stew with Beer and Paprika, recipe follows
Horseradish Mashed Potatoes, recipe follows, to cover the stew
3 tablespoons olive oil
1 tablespoon salted butter
2 pounds beef stew meat, cut into 1-inch cubes
1 medium onion, diced
3 cloves garlic, minced
2 heaping tablespoons all-purpose flour
3 cups beef stock
One 12-ounce can beer
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 1/2 teaspoons sugar
1/2 teaspoon paprika
1/2 teaspoon kosher salt
Freshly ground black pepper
Minced fresh parsley, optional, for serving
5 pounds russet or Yukon gold potatoes, peeled and cut into chunks
2 sticks salted butter, at room temperature
One 8-ounce package cream cheese, at room temperature
1 cup heavy cream
1 tablespoon horseradish cream
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1/4 cup finely chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the Beef Stew with Beer and Paprika in a 10-inch skillet or baking dish. Spoon the Horseradish Mashed Potatoes all over the surface of the stew and use a spoon or spatula to spread them out. Bake until the top is golden brown, 40 to 45 minutes.
  • Heat the oil and butter in a large pot over medium-high heat. Brown the meat in 2 batches, 2 to 3 minutes per batch; set aside on a plate.
  • Add the onions to the pot. Stir and cook until softened, 2 to 3 minutes, then add the garlic and cook for another minute. Add the flour and stir to coat the onions and garlic. Pour in the beef stock, beer and a splash of water, then add the tomato paste, Worcestershire, sugar, paprika, salt and some pepper. Add the beef back to the pot and stir to combine. Cover and simmer until the beef is cooked and the mixture has thickened, 1 1/2 to 2 hours. Top with the parsley if using.
  • Note: The liquid should cook down to a thicker state. If it gets too thick/reduces too much, add water as needed.
  • Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork-tender, 20 to 25 minutes.
  • Drain the potatoes in a large colander. Put them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all the steam to escape before adding in the other ingredients.
  • Turn off the heat and add the butter, cream cheese, heavy cream, horseradish cream, seasoned salt, kosher salt and pepper. Mash to combine. Add the chopped parsley and mix in.

Time 2h50m

Yield 6 to 8 servings

Number Of Ingredients 14

4 links Italian sausage, meat removed from casings
4 bone-in, skin-on turkey thighs
2 quarts turkey stock
4 medium carrots, diced
3 white onions, diced
1 celery stalk, diced
1 head garlic, minced
1 bunch fresh sage
1 bunch fresh thyme
Salt and freshly ground black pepper
20 medium Yukon gold potatoes
2 cups grated Gruyere
1 stick (8 tablespoons) unsalted butter
1 baguette, thinly sliced

Steps:

  • Brown the Italian sausage in a large pot over medium-high heat, then remove and reserve. Sear the turkey in the pot until golden brown on both sides, then add the stock, carrots, onions, celery, garlic, sage and thyme. Bring to a boil, then lower to a simmer and cook, uncovered, until the turkey is cooked through and the vegetables are tender, 1 hour 15 minutes to 1 hour 30 minutes. Take the turkey out of the pot and allow to cool slightly.
  • Remove the meat from the bones, then chop into bite-sized pieces. Continue to cook the remaining liquid until further reduced. Season with salt and pepper to taste. Place the turkey, sausage, vegetables and reduced stock in 9-by-13-inch casserole dish.

3 tablespoons salted butter, divided
1 cup shredded white Cheddar cheese
¼ cup sour cream
1 large egg yolk
2 teaspoons kosher salt, divided
1 teaspoon ground black pepper, divided

1 teaspoon finely chopped fresh thyme
1 cup beef stock
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
1 cup frozen green peas
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Place potatoes in large saucepan and add enough water to cover by 2 inches. Stir in 1 tablespoon salt and place pot over medium-high heat; bring to a boil. Cook until potatoes are fork tender, about 10 minutes. Turn off the heat and drain.
  • Return potatoes to the hot pan and set over the same burner. Add milk and 2 tablespoons butter; allow butter to melt from the residual heat. Mash potatoes with a potato masher until smooth. Stir in Cheddar cheese, sour cream, egg yolk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside while you prepare the filling.

Cook until thickened and vegetables are tender, about 8 minutes. Stir in peas. Transfer mixture to the prepared casserole dish and top with the prepared mashed potatoes.
  • Bake in the preheated oven until golden and bubbly around the edges, 25 to 30 minutes. Sprinkle with parsley and serve.

Tips:

  • Use high-quality ground beef: Opt for ground beef with a higher fat content (80/20 or 70/30) for a richer flavor and juicier texture.
  • Brown the beef thoroughly: Cook the ground beef over medium-high heat until it's browned and no longer pink. This will help develop flavor and prevent the meat from becoming dry.
  • Don't overcrowd the pan: When browning the beef, avoid overcrowding the pan. This will prevent the meat from cooking evenly and becoming steamed instead of browned.
  • Season the beef well: Use a generous amount of salt, pepper, and other seasonings to flavor the ground beef. This will help create a flavorful filling for the shepherd's pie.
  • Make a flavorful gravy: The gravy is an important part of shepherd's pie. Use a combination of beef broth, red wine, and Worcestershire sauce to create a rich and flavorful gravy.
  • Use a variety of vegetables: Don't be afraid to experiment with different vegetables in your shepherd's pie. Some popular choices include carrots, peas, corn, and green beans.
  • Top with a creamy mashed potato topping: The mashed potato topping is what really makes shepherd's pie special. Use a combination of butter, milk, and cream to create a smooth and creamy topping that will brown nicely in the oven.
  • Bake until golden brown: Bake the shepherd's pie in a preheated oven until the topping is golden brown and the filling is bubbling. This will take about 30-40 minutes.
  • Let it rest: Once the shepherd's pie is out of the oven, let it rest for a few minutes before serving. This will help the filling set and make it easier to serve.

Conclusion:

Ranch Shepherd's Pie is a classic comfort food dish that is perfect for a cold winter night. It's easy to make and can be tailored to your own taste preferences. With its flavorful ground beef filling, creamy mashed potato topping, and cheesy crust, this dish is sure to be a hit with the whole family.
