FRIJOLES RANCHEROS (RANCH STYLE BEANS)
An incredibly tasty, inexpensive, quick dish to make. My Honduran mother-in-law makes this when we visit. I can't get enough of it. You can add or subtract ingredients (more bacon, less onion) according to your taste. And, it freezes well. We like to eat it with rice and tortillas.

Wow! Who knew there were so many versions of Dorito casserole out there? For the record, this one is different than all the others posted here. I actually found it on Pinterest. The original reciped calls for plain tortilla chips and I decided to try it with Doritos instead. It's quite yummy!

RANCH STYLE BEAN AND DORITO SKILLET DINNER
Mom always made this as we were growing up. It never had a name - we just called it the "hamburger with beans and doritos stuff." I've tried to refrain from posting too many casserole type dishes, but my self-control has abandoned me and it's casserole time, people! So, here ya go: I am not afraid to say it - I love...

Steps:
- 1. In large skillet, brown and drain ground beef. Return the beef to skillet, and add ranch style beans (do not drain the gravy from the beans - just open the can and pour them into the skillet). Let cook over low-medium heat, covered, stirring occasionally, until beans are warmed through, for about 10 minutes.
- 2. OPTIONAL STEP: Add cooked rice at the same time as beans and stir to disperse throughout.
- 3. Add about 2-3 handfuls of Doritos. No need to crush them - just add a handful, stir; add another handful, stir. Once Doritos are well combined throughout, cover and let simmer until Doritos are soft, for about 10 minutes, stirring occasionally.
- 4. Turn heat to low. Top with shredded cheese and cover. Once cheese melts, remove from heat and serve.
- 5. If desired, make sour cream, salsa or left over uncooked Doritos available for people to dress up their plates however they prefer.
Tips:
- Use a large skillet to ensure that all of the ingredients have enough room to cook evenly.
- Do not overcrowd the skillet, or the ingredients will not cook properly.
- Be sure to cook the beef over medium-high heat so that it browns quickly and evenly.
- Use a variety of beans in your skillet dinner. This will add flavor and texture to the dish.
- Add a can of diced tomatoes with green chilies to the skillet for a spicy kick.
- Serve the skillet dinner with sour cream, guacamole, and salsa for a complete meal.
- Leftover skillet dinner can be stored in the refrigerator for up to 3 days.
Conclusion:
Ranch Style Bean and Dorito Skillet Dinner is a quick, easy, and delicious meal that is perfect for a busy weeknight. It is also a great way to use up leftover beans and Doritos. With its simple ingredients and bold flavors, this skillet dinner is sure to be a hit with your family and friends.
