I came up with this recipe years ago, and am just now getting around to adding it! It was published in BH&G magazine, but it's been so long now, that I don't remember when exactly! But I make them every year for Christmas! They're actually very easy to make, but look very impressive on a cookie tray! Buttery, flakey and so good!!! Hope you try them! :)

1 cup unsalted butter, cold and cut up
2 cups flour
1 egg yolk
1/2 cup sour cream
3/4 cup raspberry preserves
3/4 cup sweetened flaked coconut
1/3 cup finely chopped almonds
1 teaspoon vanilla
1/2 teaspoon almond extract

Tips:

  • Use cold butter. This will help the cookies hold their shape better in the oven. You can chill the butter in the fridge for about 30 minutes before using it.
  • Cream the butter and sugar together until light and fluffy. This will help the cookies be more tender and flavorful. You can use a stand mixer or a hand mixer to do this.
  • Add the dry ingredients gradually. This will help prevent the cookies from becoming too tough. You can use a whisk or a spatula to do this.
  • Chill the dough before baking. This will help the cookies hold their shape better in the oven. You can chill the dough for at least 30 minutes, or up to overnight.
  • Bake the cookies until they are just golden brown. Overbaking will make the cookies dry and crumbly. You can use a toothpick to check if the cookies are done. Insert the toothpick into the center of a cookie. If it comes out clean, the cookies are done.

Conclusion:

Raspberry almond crescent cookies with coconut are a delicious and easy-to-make treat. They are perfect for any occasion, from a casual gathering to a holiday party. With their beautiful crescent shape and delicate flavor, these cookies are sure to be a hit with everyone who tries them.
