1 1/2 cups (6 ounces) raspberries
3 tablespoons Berry Puree, using raspberries

Steps:

  • Chill a serving bowl in the freezer. In a large bowl, whip heavy cream until soft peaks form. Fold in meringues and 1 1/4 cups raspberries. Drizzle whipped cream with 2 tablespoons berry puree and lightly fold so the mixture has stripes of puree. Spoon into chilled bowl; top with remaining raspberries and berry puree.

  • Heat oven to 225°F. Line cookie sheets with parchment paper. In small bowl, combine egg whites, cream of tartar and salt; beat until soft peaks form. Gradually add sugar, beating until very stiff peaks form, about 10 minutes.

1/4 teaspoon cream of tartar
1-1/2 cups sugar
1 cup sweetened shredded coconut
1/2 cup cornstarch
FILLING:
2 packages (10 ounces each) frozen sweetened raspberries
3 tablespoons cornstarch
2 tablespoons sugar
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
10 fresh raspberries

Steps:

  • Line baking sheets with parchment and trace five 7-1/2-in. circles on paper; set aside., In a large bowl, beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. This is probably one of the lightest and most mouth-watering puddings ever invented. This delightful old fashioned British "Pud" consists of layers of baked custard, raspberry jam and is finished with clouds of light, fluffy meringue - truly a Queen in the pudding world. It is a quintessential Nursery dessert, something that Nanny would rustle up for her young charges in the nursery. My mum would often make this for Sunday high tea, and we all loved it. I often use brioche crumbs for a richer custard base, but any white bread crumbs will be fine. There are numerous recipes for this classic dessert; this recipe is by James Martin, one of my favourite British chefs.

8 fluid ounces milk
8 fluid ounces double cream
1 vanilla pod, split
3 1/2 ounces caster sugar
5 free-range egg yolks
5 ounces fresh breadcrumbs
2 lemons, zest only
7 ounces raspberry jam
4 free-range egg whites
4 ounces caster sugar
1 tablespoon icing sugar, for dusting

Steps:

  • Preheat the oven to 160C/310F/Gas 2.
  • For the pudding base, pour the milk and cream into a pan and add the split vanilla pod. Bring slowly to the boil over a medium heat.
  • Place the sugar into a large bowl with the egg yolks and whisk until the mixture is light and creamy.
  • Slowly pour the egg mixture into the hot milk and cream, whisking all the time, then add the breadcrumbs and lemon zest.
  • Half-fill a roasting tin with boiling water to make a bain-marie. Pour the pudding mixture into individual ramekins, or one large oven-proof baking dish and place them into the bain-marie.
  • Place the bain-marie in the centre of the oven and bake for 10-15 minutes, or until the pudding or puddings are almost set, but still slightly wobbly in the centre.
  • Remove from the oven and allow to cool.
  • Increase the oven temperature to 190C/375F/Gas 5.
  • For the meringue topping, place the egg whites into a large clean bowl and whisk until stiff peaks form when the whisk is removed. Gradually whisk in the caster sugar, a tablespoonful at a time.
  • Place the jam into a small pan over a low heat and gently melt. Spread the jam over the top of the puddings, then cover the puddings completely with the meringue mixture.
  • Sprinkle with the icing sugar and bake for 10 to 15 minutes, or until the top is crisp and lightly browned.
  • To serve, remove from the oven and serve immediately.

1 1/3 cups granulated sugar
1/2 teaspoon cornstarch
1/2 teaspoon white vinegar or 1/2 teaspoon lemon juice
2 cups heavy cream
1/2 cup powdered sugar
1 vanilla bean, split and seeds scraped
2 pints raspberries
1/4 cup powdered sugar
1/2 cup pistachios, shelled and coarsely chopped
1/4 cup mint leaf, thinly sliced

Steps:

  • For the meringue: preheat the oven to 225 and place parchment paper on two large baking sheets. Beat the egg whites to the soft peak stage. As you continue to beat the egg whites on medium speed, gradually add sugar. When stiff glossy peaks form (about 5 minutes), reduce speed to low and add cornstarch and vinegar. Beat mixture for 20 seconds on high. Spread the mixture in 9" rounds on the baking sheets. Rounds will be about 1/2" high. Bake until the meringue is dry and crisp, about 3 hours. Let meringue cool before making the Eton Mess.
  • Prepare the whipped cream by whipping the cream to soft peak stage. Add 1/2 cup powdered sugar and vanilla seeds. Whip the mixture until firm peaks form.
  • Reserve one quarter of the raspberries. Combine the remainder with 1/4 c powdered sugar, and coarsely mash. Gently fold the raspberry mixture into the whipped cream.
  • Crumble the cooled meringue. Reserve 1 cup of meringue and mix the remainder into the raspberry whipped cream mixture.
  • Spoon the whipped cream mixture into individual bowls.
  • Top each with some of the remaining meringue, the whole raspberries, pistachios, and mint.
