Tips:

  • Choose Fresh Raspberries: Use plump, ripe raspberries for the best flavor. Avoid berries that are bruised or moldy.
  • Prep Your Jars: Sterilize your jars and lids by boiling them in water for 10 minutes. This will help to prevent spoilage.
  • Use a Candy Thermometer: A candy thermometer is essential for making raspberry cordials. It will help you to accurately measure the temperature of the syrup, which is critical for achieving the right consistency.
  • Let the Cordials Cool: Once the cordials are made, let them cool completely before bottling them. This will help to prevent the bottles from cracking.
  • Store Properly: Store the raspberry cordials in a cool, dark place. They will keep for up to a year.
