1 ½ cups butter, softened
1 ½ cups powdered sugar
6 eggs, separated
1 ½ cups white sugar
2 teaspoons rice vinegar
2 teaspoons cornstarch
¾ cup raspberry preserves, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat flour, butter, powdered sugar, and egg yolks together in a large bowl. Press into the bottom of a 9x13-inch baking pan.
  • Bake in the preheated oven until lightly golden, about 12 minutes.

1 egg
½ cup packed brown sugar
7 ounces almond paste
½ teaspoon almond extract
2 cups all-purpose flour
¾ cup seedless red raspberry jam
3 egg whites
½ cup white sugar
½ cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13 inch baking pan with greased aluminum foil.
  • To make the Crust: In a large bowl, mix together the butter, almond paste, and brown sugar until smooth. Beat in one egg and the almond extract. Mix in the flour and stir until well blended.

1 1/2 cups ( 375 mL ) all purpose-flour
2 tsp ( 10 mL ) baking powder
½ cup ( 125 mL ) butter
2 egg yolks
1 cup ( 250 mL ) raspberry jam
2 egg whites
¾ cup ( 175 mL ) brown sugar
1 cup ( 250 mL ) unsweetened coconut

Steps:

  • For the base, mix flour and baking powder together in medium bowl. Add butter and mix to form pea size particles. Stir in egg yolks. Mix well. Transfer to an ungreased 9 X 9 inch (23 X 23 cm) pan.
  • Drop spoonfuls of raspberry jam over base and then carefully spread jam over the base. In a large bowl, beat egg whites until foamy. Gradually add brown sugar while beating on high. Continue beating until mixture is stiff and glossy. Stir in coconut. Spread egg white mixture over jam layer. Bake at 350°F (180°C) for approximately 30 to 35 minutes. 1/4 cup seedless raspberry jam
1/4 teaspoon Betty Crocker™ red or gel food color

4 egg whites, room temperature
1/4 teaspoon cream of tartar
1/2 teaspoon pure vanilla extract
1 cup sugar
1/8 teaspoon red liquid food color
1 cup miniature semisweet chocolate chips
1 1/2 cups dark chocolate chips
5 teaspoons shortening

Steps:

  • Place oven racks in upper and lower third of oven. Heat oven to 250°F. Line 2 large cookie sheets with cooking parchment paper.
  • In food processor, place raspberries; cover and process until finely ground. Remove 1 teaspoon for decoration; set aside.
  • In large bowl, beat egg whites, cream of tartar and vanilla with electric mixer on high speed until foamy. Slide bottom of meringue on edge of bowl to remove excess. Return to lined cookie sheet. Repeat with remaining meringues. Let stand about 3 hours or until chocolate is set. Store covered in airtight container in single layer.
