Time 1h10m

Number Of Ingredients 5

1 c butter
1/2 lb cream cheese
2 c flour, sifted
1 tsp salt
red raspberry jam, seeded

Steps:

  • 1. Combine butter & cream cheese-blend well. Combine flour & salt. Add to butter mixture and blend well. Chill 1/2 hr.
  • 2. Roll chilled dough out to 1/4" thickness. Cut into 2-1/2" squares. Spread with 1 tsp jam to within 1/4" of edges. Roll up firmly. Place rolled edge down on un-greased baking sheet.
  • 3. Bake 425 degrees for 12 minutes or until slightly brown. Dust with powdered sugar.

Tips:

  • Use fresh raspberries for the best flavor. Frozen raspberries can be used, but they will not have the same vibrant color and flavor as fresh raspberries.
  • If you don't have a rolling pin, you can use a wine bottle or even a glass to roll out the dough.
  • Be sure to chill the dough before rolling it out. This will help to prevent the dough from sticking to your hands and will make it easier to roll.
  • If the dough is too sticky, you can add a little more flour. However, be careful not to add too much flour, as this will make the dough tough.
  • Bake the raspberry roll-ups until they are golden brown. This will ensure that they are cooked through and have a slightly crispy exterior.
  • Let the raspberry roll-ups cool slightly before serving. This will help to prevent the filling from oozing out.

Conclusion:

Raspberry roll-ups are a delicious and easy-to-make treat that are perfect for any occasion. They are made with a simple dough that is filled with fresh raspberries and then rolled up and baked. The result is a golden brown pastry that is filled with a sweet and tart raspberry filling. Raspberry roll-ups can be served plain or with a dollop of whipped cream or ice cream.
