Tips:

  • Choose the right sweet potatoes: Look for firm, smooth sweet potatoes without any blemishes or bruises. Avoid any potatoes that have started to sprout.
  • Wash and peel the potatoes: Scrub the potatoes thoroughly under running water to remove any dirt or debris. Then, use a sharp knife to peel the potatoes.
  • Cut the potatoes into even-sized pieces: This will help them cook evenly. Cut the potatoes into 1-inch cubes or wedges.
  • Soak the potatoes in water: This will help to remove excess starch and prevent the potatoes from sticking together. Soak the potatoes in cold water for at least 30 minutes.
  • Make the syrup: Combine the sugar, water, butter, and spices in a saucepan. Bring the mixture to a simmer over medium heat, stirring constantly until the sugar has dissolved.
  • Add the potatoes to the syrup: Drain the potatoes and add them to the syrup. Stir to coat the potatoes evenly.
  • Bring the mixture to a boil: Increase the heat to high and bring the mixture to a boil. Stir constantly to prevent the potatoes from sticking to the bottom of the pan.
  • Reduce the heat and simmer: Once the mixture has come to a boil, reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
  • Remove the potatoes from the syrup: Use a slotted spoon to remove the potatoes from the syrup. Transfer the potatoes to a serving dish and let them cool slightly before serving.
