SPICED SAUTEED RED CABBAGE WITH CRANBERRIES

Spiced Sauteed Red Cabbage with Cranberries image

I have always adored red cabbage cooked long and slow, but it's also extremely good cooked fast so that it retains some bite and crunchiness. Using cranberries rather than the usual apples gives this dish a jewel-like appearance and their sharp flavour gives an edge to the spiciness.

Yield Serves 4-6. See questions Lindsey has answered on this recipe at the end of the method

Number Of Ingredients 10

1 lb (450 g) red cabbage, cut into 4 sections and cored
4 oz (110 g) cranberries
1 dessertspoon groundnut oil
1 medium onion, chopped
1 large garlic clove, finely chopped
1/3 level teaspoon ground cloves
1/3 rounded teaspoon ground cinnamon
1/3 whole nutmeg, freshly grated
1 heaped dessertspoon soft brown sugar
11/2 tablespoons red wine vinegar

Steps:

  • First of all you need to shred the cabbage quite finely into 1/4 inch (5 mm) shreds, discarding any tough stalky bits. Now heat the oil in the pan over a medium heat, stir in the onion, cook it for 2-3 minutes, then add the garlic and continue to cook for another 2-3 minutes. Then turn the heat up to its highest setting and add the cabbage. Using a wooden spoon, keep the cabbage constantly on the move so it comes into contact with the hot pan on all sides. After about 3-4 minutes of cooking, still stirring, sprinkle in the spices, a seasoning of salt and pepper, followed by the cranberries. Then turn the heat down and let it go on cooking for a further 5-10 minutes, stirring it once or twice during that time. Bite a piece to see if it's tender, then when it's ready turn the heat up again, sprinkle in the sugar and vinegar, give it all a few more good stirs andd then it's ready to serve. NOTE: If you're careful not to overcook in the beginning, you can prepare this in advance and just quickly heat it up for serving. It can also be frozen fo rup to 3 months.

RED CABBAGE WITH CRANBERRIES

Red Cabbage with Cranberries image

The sweetness of a long-braised red cabbage is perfectly punctuated by the cheek-squeaky sharpness of cranberries. And, if you let this stand a little before serving, they - most desirably - help to thicken the juices the cabbage gives off as it cooks. Indeed, I always make red cabbage ahead of time: think of it as a vegetable stew, which is better, as all stews are, when the flavours are left to mellow and merge with one another. If you are following suit, then you can cook the cabbage for slightly less than its full time, as it will continue to cook on reheating. Even a small red cabbage seems to make enough to feed an army, but I can't see the point of leaving half a red cabbage lingering in the fridge. If you're feeding less than a crowd, just stash what you don't need in airtight containers in the deep freeze, ready to provide warm succour on cold winter nights. For US cup measures, use the toggle at the top of the ingredients list.

RED CABBAGE SLAW WITH CRANBERRY DRESSING

Red Cabbage Slaw with Cranberry Dressing image

Cranberry dressing gives this slaw its tang.

Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 8

1 small shallot, quartered
3/4 cup fresh cranberries
1 tablespoon plus 1 teaspoon pure maple syrup
1 tablespoon plus 2 teaspoons red wine vinegar
3 tablespoons extra-virgin olive oil
1 teaspoon coarse salt
Freshly ground pepper
1/2 medium red cabbage, very thinly sliced (about 6 cups)

Steps:

  • Finely chop shallot and cranberries in a food processor. Add syrup, vinegar, oil, and salt, and process until just combined. Season with pepper.
  • Toss cabbage and dressing in a medium bowl. Cover tightly with plastic wrap, and refrigerate, stirring occasionally, at least 4 hours (up to overnight).

Tips:

  • Choose the right cabbage: Red cabbage is the traditional choice for this dish, but you can also use green cabbage or a combination of the two. Look for a head of cabbage that is firm and heavy, with tightly packed leaves.
  • Shred the cabbage finely: This will help it cook evenly and absorb the flavors of the other ingredients.
  • Use a variety of cranberries: Fresh, frozen, or dried cranberries can all be used in this recipe. If using dried cranberries, be sure to plump them up in hot water before adding them to the dish.
  • Add some sweetness: Sugar, honey, or maple syrup can all be used to add a touch of sweetness to the dish. If you are using dried cranberries, you may not need to add any additional sweetener.
  • Season to taste: Be sure to taste the dish before serving and adjust the seasonings as needed. You may want to add more salt, pepper, or vinegar, depending on your personal preference.

Conclusion:

Red cabbage with cranberries is a delicious and versatile side dish that can be enjoyed all year round. It is perfect for potlucks, picnics, and holiday meals. With its vibrant color and sweet-and-sour flavor, this dish is sure to be a hit with everyone who tries it.
