Yield Makes 8 servings

Number Of Ingredients 6

3/4 cup red currant jelly
6 tablespoons whole grain Dijon mustard
1 1/2 teaspoons ground ginger
1 9-pound fully cooked bone-in ham (shank or butt end)
1 bunch watercress
Rhubarb Chutney

Steps:

  • Position rack in bottom third of oven and preheat to 325°F. Whisk jelly, mustard, and ginger in heavy medium saucepan over medium heat until melted, about 1 minute. Remove glaze from heat.
  • Trim any tough rind and fat from upper side of ham, leaving 1/4-inch-thick layer of fat. Using long sharp knife, score fat in 1-inch-wide diamond pattern. Place ham in roasting pan. Bake 1 hour. Brush top and sides of ham generously with some of glaze. Bake until thermometer inserted into thickest part of ham registers 140°F, brushing with glaze every 15 minutes and tenting ham with foil if browning too quickly, about 1 hour 15 minutes. Remove ham from oven; let stand 15 minutes. Transfer to platter. Garnish with watercress. Serve with Rhubarb Chutney.

SPICY CURRANT SAUCE FOR HAM

Spicy Currant Sauce for Ham image

This was handed down through the women in my family. We all love it, but I'm always amazed how many guests beg for the recipe saying that they have never tasted anything like it. The cloves and Worcestershire sauce give it a lovely kick. It keeps really well, so can be made days in advance. It is also a great (and easy) holiday gift.

RED CURRANT SAUCE

Red Currant Sauce image

Recipe I came up with to serve with a chicken dish but I think it would be also suited to other poulty and game meats. I didn't use a great amount of sugar so the sauce retains a bit of tartness from the currants which was what I was after rather than anything too sweet. Note that it's quite a thin sauce rather than a thick one, aimed at things like rice and battered items that will soak it up, but you could always thicken it with cornflour.

Yield 1 1/2 cups, 8 serving(s)

Number Of Ingredients 3

300 g red currants
150 g brown sugar
3 tablespoons malt vinegar

Steps:

  • Combine ingredients in medium saucepan.
  • Start cooking over medium temperature and lower after a while to maintain a gentle simmer, stirring occasionally.
  • I started with frozen currants and cooked for 25 minutes, I imagine 20 minutes would be sufficient for fresh currants and the first 5 minutes was more or less defrosting them.

CURRANT MUSTARD-GLAZED HAM

Currant Mustard-Glazed Ham image

Categories     Mustard     Bake     Currant     Ham     Clove     Gourmet

Yield Serves 6 to 8

Number Of Ingredients 4

a 7-to-8 pound half (shank end) of a fully cooked cured ham
whole cloves for studding the ham
1/3 cup red-currant jelly
1 1/2 tablespoons Dijon-style mustard

Steps:

  • If the ham comes with the skin still attached, remove most of it with a sharp knife, leaving a collar of skin around the shank bone and a layer of fat. Trim the fat, leaving a layer about 1/3 inch thick, score the layer remaining into diamonds, and stud the center of each diamond with a clove. Bake the ham on a rack in a roasting pan in a preheated 350°F. oven for 55 minutes.
  • In a small saucepan heat the jelly over moderate heat, stirring, until it is melted and smooth, remove the pan from the heat, and stir in the mustard. Spoon the glaze over the ham, spreading it evenly, and bake the ham for 30 to 35 minutes more, or until the glaze is brown and bubbly. Transfer the ham to a platter and let it stand for 15 minutes before carving. If planning to make the ham, spinach, and pasta gratin (page 117), reserve 1 pound of the carved ham, covered and chilled.

Tips:

  • To make a smooth sauce, strain the sauce through a fine-mesh sieve before serving.
  • If you don't have red currant jelly, you can substitute another type of fruit jelly, such as raspberry or blackberry.
  • This sauce can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Serve the sauce warm over ham, pork, or chicken, preferably with mashed potatoes or noodles.
  • If you have fresh red currants, you can make your own red currant jelly. To do this, simmer the currants with sugar and a little water until the mixture thickens. Then, strain the mixture through a fine-mesh sieve and discard the seeds.

Conclusion:

Red currant ham sauce is a delicious and easy-to-make sauce that is perfect for any occasion. It is a great way to add flavor to your favorite ham, pork, or chicken dishes. You can also use it as a glaze for roasted vegetables or fruit. With its vibrant color and sweet and tangy flavor, red currant ham sauce is sure to be a hit at your next meal.
