2 tablespoons chopped fresh ginger
2 cloves garlic, chopped
8 scallions, sliced, white and green parts separated
1 tablespoon curry powder
4 medium carrots (about 8 ounces), chopped
1 large russet potato (about 10 ounces), peeled and cut into 1-inch pieces
1 cup red lentils
4 cups low-sodium vegetable broth
kosher salt and black pepper
naan bread and lime wedges, for serving

Steps:

  • Heat the oil in a large saucepan over medium-high heat. Add the ginger, garlic, and scallion whites and cook, stirring frequently, until softened, 2 to 3 minutes. Stir in the curry powder. 2 teaspoons canola oil
1 onion, diced
2 garlic cloves, crushed
1 tablespoon ginger, grated
1 large tomatoes, diced
1/2-1 red chili pepper, de-seeded and finely chopped (optional)
1 large potato, peeled and diced
2 tablespoons curry powder
1/2 teaspoon turmeric
2 tablespoons fresh cilantro, chopped
650 ml water
250 g red lentils
fresh coriander leaves, chopped

Steps:

  • 1. Heat the oil in a large sauce pan or large skillet.
  • 2. Cook the onion until edges begin to turn brown.
  • 3. Add ginger, garlic and tomato. Cook for 5 minutes or until tomato begins to break down.
  • 4. Add the diced potatoes, stir once or twice to coat with flavour.
  • 5. Add the chilli pepper (if using), curry powder, turmeric, coriander. Coat the potatoes well. Cook for five minutes.
  • 6. Add the lentils and water. Cook for 25-30 minutes, until lentils are soft.
  • 7. You may need to add additional water if the lentils are not cooked through but all the water has been absorbed.
  • 8. Garnish with fresh coriander leaves.

2 tbsp vegetable or olive oil
1 red onion, chopped
1 tsp cumin seeds
1 tsp mustard seeds (any colour)
1 tbsp medium curry powder
100g red or green lentil, or a mixture
2 medium sweet potatoes, peeled and cut into chunks
500ml vegetable stock
400g can chopped tomato
400g can chickpea, drained
¼ small pack coriander (optional)
natural yogurt and naan bread, to serve

Steps:

  • Heat 2 tbsp vegetable or olive oil in a large pan, add 1 chopped red onion and cook for a few mins until softened.
  • Add 1 tsp cumin seeds, 1 tsp mustard seeds and 1 tbsp medium curry powder and cook for 1 min more, then stir in 100g red or green lentils (or a mixture), 2 medium sweet potatoes, cut into chunks, 500ml vegetable stock and a 400g can chopped tomatoes.
  • Bring to the boil, then cover and simmer for 20 mins until the lentils and sweet potatoes are tender. Add a drained 400g can chickpeas, then heat through.
  • Season, sprinkle with ¼ small pack coriander, if you like, and serve with seasoned yogurt and naan bread.

1 cup dry split red lentils (rinsed well)
1 15-ounce can chickpeas, drained and rinsed
1 medium yellow onion (diced - about 2 cups)
2 medium cloves garlic (minced)
2 1/2 cups diced Yukon Gold potatoes (about 1 pound)
2 cups low-sodium vegetable broth
1 tablespoon curry powder
1/8 teaspoon cayenne pepper (optional; adds some extra heat)
1 teaspoon kosher salt + more to taste
1 14-ounce can lite coconut milk
1 cup frozen peas
Rice
Cilantro

Steps:

  • To a 4-quart or larger slow cooker, add the lentils, chickpeas, onion, garlic, potatoes, vegetable broth, curry powder, cayenne pepper if using, and salt. 6 ounces red lentils
2 garlic cloves (I use the ready crushed stuff out of a jar, 2tsp)
1 large onion, chopped
2 ounces butter
1 teaspoon ground ginger
1 tablespoon curry powder
1 teaspoon chili powder
1 lb chicken breast, boneless and cut into chunks
8 ounces potatoes, boiled and diced
1 (16 ounce) can tomatoes
1 -2 tablespoon plain yogurt
2 tablespoons mango chutney
salt and pepper

Steps:

  • Fry the lentils, garlic and onions in the butter. Add the ginger and curry powder and continue to cook for 10 minutes over a low heat.
