ROASTED RED PEPPER KETCHUP

Roasted Red Pepper Ketchup image

Yield Makes about 3 cups

Number Of Ingredients 12

1 14 1/2-ounce can diced tomatoes in juice
1 7.25-ounce jar roasted red peppers, drained
1 cup chopped red onion
1/2 cup dry red wine
6 tablespoons golden brown sugar
2 large dried ancho chilies, seeded, coarsely chopped
2 tablespoons tomato paste
2 tablespoons red wine vinegar
1 tablespoon fennel seeds
2 teaspoons chopped garlic
1 1/2 teaspoons ground cumin
1 bay leaf

Steps:

  • Combine tomatoes with juices and all remaining ingredients in heavy large saucepan over high heat. Bring to boil. Reduce heat to medium and simmer until reduced to about 3 cups, about 30 minutes. Discard bay leaf. Working in batches, purée ketchup in blender until smooth. Season with salt and pepper. Cool slightly, then chill until cold. (Ketchup can be prepared 1 week ahead. Cover and keep refrigerated.)

Tips:

  • Choose the right onions: Red onions are the preferred choice for this ketchup, as they provide a slightly sweet and tangy flavor. However, you can use other types of onions, such as yellow or white onions, if desired.
  • Use fresh ingredients: Fresh, ripe tomatoes are essential for making the best ketchup. Avoid using canned or processed tomatoes, as they can lack flavor and texture.
  • Cook the ketchup slowly: Simmering the ketchup over low heat allows the flavors to meld and develop. Be patient and don't rush the process.
  • Use a food processor or blender: A food processor or blender can help you achieve a smooth and consistent ketchup. However, if you don't have one of these appliances, you can also use a potato masher or immersion blender.
  • Taste the ketchup as you go: Adjust the seasonings to your liking. You may want to add more sugar, vinegar, or spices, depending on your personal preference.

Conclusion:

Red onion ketchup is a delicious and versatile condiment that can be used on a variety of foods. It's perfect for burgers, hot dogs, fries, and even sandwiches. It can also be used as a dipping sauce for vegetables or as a marinade for meats. With its sweet and tangy flavor, red onion ketchup is sure to be a hit with everyone who tries it.
