5 red onions, quartered with roots intact
2 tablespoons olive oil
3 egg yolks
⅝ cup heavy whipping cream
4 ½ ounces goat cheese
salt to taste

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).

40 ml olive oil
30 g butter
3 red onions, peeled, halved, thinly sliced
60 ml red wine vinegar
60 g brown sugar
4 eggs
375 ml heavy cream
1 pinch salt
4 sheets phyllo pastry

  • Lightly brush a 19cm slab pan with a little of the olive oil.
  • Preheat your oven to 180°C.
  • Melt the butter in a frying pan over a medium to high heat.
  • Add the onions and cook stirring for 10 minutes or until soft.

  • Cook stirring occasionally for 8-10 minutes or until the liquid evaporates, and onions caramelise.
