1/2 ounce Clarified Butter
1/2 ounce Celery (diced small)
1/2 ounce Carrots (diced small)
1/8 cup Red Peppers (diced small)
1/8 cup Green Peppers (diced small)
1 ounce Onions (diced small)
1 clove Garlic (minced)
1 tablespoon Chicken Base
1 1/2 ounces Tomato Paste
1/2 tablespoon Worcestershire Sauce
1/2 cup Dry White Wine (leave out, if desired)
2 quarts strong Vegetable or Fish Stock
1/2 Bay Leaf
8 White Crushed Peppercorns
1 pinch Thyme
4 ounces White Roux
Salt and freshly ground Black Pepper (to taste)

Steps:

  • In a large stock pot, heat butter over medium heat.
  • When hot, add celery, carrots, red and green peppers, onions and garlic. Sauté until onions are tender.
  • Add chicken base, tomato paste, tomato paste, Worcestershire sauce, wine, stock, bay leaf, peppercorns and thyme. Bring to a boil.
  • Reduce heat and stir in the roux and simmer, over medium heat, for 20 minutes.
  • Taste. Add salt and pepper, to taste.
  • Strain.

2 tablespoons olive oil
2 carrots, chopped
2 celery ribs, chopped
2 cloves garlic, chopped
1 onion, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
12 white peppercorns or 12 black peppercorns, crushed
1 bay leaf
3 tablespoons tomato paste
2 teaspoons chopped fresh thyme
2 teaspoons chopped fresh rosemary
2 teaspoons chopped cilantro
8 cups vegetable broth
3 tablespoons unsalted butter
2 tablespoons flour
1 tablespoon cornstarch
salt
2 small onions, chopped fine
3 celery ribs, chopped fine
1 -2 red snapper fillet (10 oz.)
1/4 cup sherry wine (optional)

Steps:

  • To make soup base, heat olive oil in a Dutch oven over medium heat; add carrots, celery, garlic, onion, red bell pepper, and green bell pepper; cook, stirring frequently, about 4 minutes.
  • Stir in peppercorns, bay leaf, tomato paste, thyme, rosemary, and cilantro; cook 2 minutes and add 7 cups of the vegetable broth; heat to boil.
  • Melt butter in a small saucepan; add flour and cornstarch, cook, stirring constantly, 4 to 5 minutes.
  • Slowly whisk in remaining 1 cup broth until mixture is smooth; add mixture to soup base; cover and simmer over medium-low heat 20 minutes.
  • Taste and adjust seasonings.
  • Strain through a fine-mesh sieve or cheesecloth; discard solids and return broth to pot.
  • To make snapper, heat water to boil in a medium-sized saucepan over medium-high heat; add onions and celery; blanch until soft, about 3 minutes.

Shells from 2 1/2 pounds medium shrimp (about 4 1/2 cups)
2 shallots, peeled and sliced
1 2-inch piece ginger, sliced
2 cloves garlic, sliced
2 tomatoes, chopped
1 stalk lemongrass, bruised
2 whole Thai chili peppers, sliced
Kosher salt and freshly ground black pepper to taste
2 star fruits, very thinly sliced
1 pound red snapper fillets, very thinly sliced
1 lime, preferably key lime, halved
Cilantro leaves for garnish

Steps:

  • In a large, heavy kettle, heat the oil over high heat and add the shrimp shells. Cook, tossing continually, for 2 minutes. Add the shallots, ginger and garlic and continue to cook for 3 more minutes, or until the shells are lightly browned. Add 10 cups of water, the tomatoes, lemongrass and chilies and bring to a boil. Lower the heat and simmer, uncovered, until the liquid is reduced to 5 cups, about 1 hour.
  • Strain the broth, pressing down on the shells to extract as much liquid as possible. Return the broth to the pot and season to taste with salt and freshly ground black pepper.
  • When ready to serve, bring the broth back to a simmer. Add the star fruits and red snapper. Lightly squeeze the lime over the soup and then drop it into the pot. Simmer for 2 minutes, or until the fish is just cooked through. Remove from the heat and serve immediately, garnished with cilantro leaves.

8 tablespoons olive oil
Kosher salt and freshly ground black pepper
8 cloves garlic
6 to 10 Scotch bonnet chile peppers
3 oranges, 1 juiced, 1 cut into segments, 1 thinly sliced
1 mango, chopped
1 red onion, sliced
1 papaya, chopped
2 lemons, 1 juiced, 1 thinly sliced
2 limes, 1 juiced, 1 thinly sliced
Bunch fresh cilantro, chopped
1 star fruit, thinly sliced, optional

Steps:

  • Preheat the grill to high heat.
  • Cut 3 thin slices into both sides of each fish. Drizzle both sides of the fish with 6 tablespoons of the olive oil, sprinkle with salt and black pepper, and put 4 cloves of the garlic into each fish cavity. Grill the fish until golden and browned, 3 to 5 minutes per side. Lower the heat to medium, throw the Scotch bonnet peppers on the grill, close the lid and continue cooking for 10 minutes.

To celebrate the short Scandinavian summer, people make special fruit puddings such as this one. Any berry or combination of berries works, but you may need to adjust the amount of sugar to compensate. Chilling time is unknown, so be sure to make this dessert ahead of time. NOTE: This recipe was printed in the World Cookbook as a pudding. Thanks to UmmIbrahim for taking the time to make and review this recipe. As a result of her findings, I've re-titled it as a soup instead of a pudding. Berry soups are a popular treat in Scandinavia and because of that I've decided it should really be presented as a cold soup. :)

  • Put the fruit, sugar and water in a pan. Cook them over a low heat for five minutes, until the fruit is soft.

1/2 pound red snapper fillets, cut crosswise into 1 1/2-inch-wide strips

1 tablespoon olive oil
1 large clove, minced
1/2 teaspoon ground coriander
1/8 teaspoon cayenne
1 large boiling potato (about 1/2 pound)
a 16-ounce can whole tomatoes including juice
1 1/4 cups water
2 tablespoons fresh orange juice
1/2 extra-large vegetarian vegetable bouillon cube
1 tablespoon minced fresh parsley leaves
1/4 teaspoon freshly grated orange zest

Steps:

  • Cut leek crosswise into 1/2-inch slices and in a bowl soak in water to cover, agitating occasionally to dislodge any sand, 5 minutes. Lift leek out of water and drain in a colander.
  • In a bowl toss snapper gently with salt and chill, covered.
  • In a saucepan cook leek with salt to taste in oil over moderately high heat, stirring occasionally, until softened, about 5 minutes. Add garlic, coriander, and cayenne and cook, stirring, 1 minute.

2 teaspoons safflower or canola oil
2 red snapper fillets, skin-on, about 1 1/2 pounds

Steps:

  • Remove the fish 15 minutes before cooking to "temper." Thoroughly pat dry each fillet on both sides with paper towel. Score the skin lightly with a sharp knife, carefully. Do not pierce the flesh.
