1/3 cup finely chopped white onion
1 (15 1/2-ounce) can black beans, including liquid
1 medium garlic clove, pressed or finely grated

Steps:

  • Heat the oil in a medium pan over medium-high heat until it shimmers. Add the onion and cook, stirring often, until it's soft and browned at the edges, about 5 minutes. Add the beans, garlic, and chile powder.

2 pickled jalapeno peppers, seeded and diced
2 fresh garlic cloves, chopped
1/4 cup onion, chopped

1 cup shredded monterey jack cheese or 1 cup queso blanco

Steps:

  • Prepare a large skillet by heating drippings or lard over medium heat.

1 tablespoon cooking oil
1 cup diced onion
2 cloves garlic, minced
1 cup chopped green chiles
1 ½ tablespoons chili powder

¼ cup chicken broth
1 tablespoon cider vinegar
salt to taste

Steps:

  • Place black beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain.
