1 tablespoon olive oil, plus more for tossing and drizzling
1 link Italian turkey sausage, casing removed
24 large white mushrooms, stems removed, reserved and chopped
2 cloves garlic, minced
1/4 cup white wine
4 ounces crumbled blue cheese
3/4 cup panko breadcrumbs
2 tablespoons finely chopped fresh parsley
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a large skillet over medium-high heat. Add the olive oil and once hot, add the turkey sausage and cook, breaking up with the back of a wooden spoon, about 2 minutes. Once the sausage is beginning to brown, add the mushroom stems and continue to cook until soft and the turkey is cooked through. Add the garlic and briefly saute until fragrant. Stir in the white wine and scrap up any browned bits on the bottom of the pan. Cook until the wine has evaporated. Transfer the mixture to a bowl. Add the blue cheese, breadcrumbs and parsley to the sauteed mixture and stir to combine.
  • Place the mushroom caps cavity-side up on the a sheet tray. Drizzle with olive oil and sprinkle with salt and pepper. Spoon the filling into the cavities and drizzle again with olive oil. You may need to pack down the filling with your hands. Bake 20 minutes.

1 lb large-size fresh mushrooms
4 tablespoons butter, melted
1/3 cup bread or 1/3 cup corn flake crumbs
1/3 cup parmesan cheese
salt and pepper
1/4 teaspoon garlic powder (or to taste, or use fresh garlic)
1 cup grated mozzarella cheese (can use more)

Steps:

  • Set oven to 350 degrees.
  • Butter a shallow baking dish.
  • Clean mushrooms with a brush (do not use water to clean the mushrooms).
  • Gently twist off stems, setting mushroom caps aside.
  • Finely chop stems, very small.
  • In a bowl mix crumbs with the chopped stems, melted butter, Parmesan, salt (I use seasoned salt), black pepper and garlic powder.
  • Fill caps with crumb mixture.
  • Top with grated mozza cheese (at this point, the mushrooms may be refrigerated then baked at a later time).
  • Set caps on buttered baking dish.
  • Bake for about 7-8 mins, or until cheese is melted, and mushrooms are hot.

12 fresh mushrooms
½ pound ground beef
1 tablespoon minced onion
1 clove garlic, minced
1 tablespoon butter
¼ cup bread crumbs
salt and pepper to taste
¼ cup heavy cream
¼ cup butter, melted
1 teaspoon chili powder

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Remove and chop mushroom stems.
  • In a saucepan over medium heat, combine ground beef, onion, and garlic. Cook until beef is no longer pink; drain. Mix in chopped mushroom stems, 1 tablespoon butter, bread crumbs, salt, and pepper. Cook, stirring frequently, for 5 minutes. Remove from heat, and stir in cream.

1/2 stick (4 tablespoons) butter
12 ounces white button mushrooms, stemmed and washed
4 to 5 green onions (up to the middle of the dark green part), sliced
4 cloves garlic, minced
1/4 cup chopped fresh flat-leaf parsley
Splash of white wine, optional
One 8-ounce wedge Brie cheese, cut into bite-size chunks

Steps:

  • Preheat the oven to 375 degrees F.
  • Melt the butter in a large skillet over medium-high heat. When the butter is melted and the skillet is hot, throw in the mushroom caps and toss them around for a minute. Remove from the skillet and set aside.
  • Throw the green onions and garlic in the skillet, saute for a minute and then add the parsley and wine (if you're using it). Stir and cook for 1 to 2 minutes to release all the flavors, then remove from the heat.
  • Set the mushroom caps on a baking sheet or in a baking dish. Place a chunk of Brie inside of each cap, then pour the parsley mixture all over the tops. Bake until the cheese is melted, about 15 minutes.

5 ounces baby spinach
5 ounces garlic and herb Gournay cheese, such as Boursin, at room temperature

1 cup Italian-style breadcrumbs
1/2 cup walnuts

2 to 3 tablespoons olive oil
20 to 24 cremini mushrooms, stems and gills removed

Steps:

  • Preheat the oven to 375 degrees F.
  • For the filling: In a medium pot, heat the olive oil over medium heat. Add the spinach and cook, stirring constantly, until just wilted, about 2 minutes. Add the cheese, garlic and red pepper flakes. Cook over medium heat, constantly tossing and stirring, until the cheese melts and everything is mixed together, another 2 to 4 minutes. 8 ounces brie cheese, cut into bite-size chunks
2/3 cup panko

  • Preheat the oven to 375˚F. Arrange the mushrooms cap-side up on a rimmed baking sheet. Brush with 1 tablespoon melted butter. Flip the mushrooms cap-side down and stuff a piece of brie inside each.
  • Mix the panko, parsley, garlic, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Mix in the remaining 5 tablespoons melted butter. Spoon a little of the mixture on each mushroom.

1/2 cup baby spinach, finely chopped

2 tablespoons flat-leaf parsley, chopped
1/8 teaspoon salt, plus additional for sprinkling on mushroom caps

Steps:

  • Preheat the oven to 325 degrees F. Brush a baking sheet with 1 teaspoon of the oil.
