ORANGE RICE PUDDING WITH MINTED ORANGE/CRANBERRY GLAZE

Orange Rice Pudding With Minted Orange/Cranberry Glaze image

From chef and cookbook author Michel Nischan as printed in our local newspaper. The basmati rice I think, gives the pudding an especially delightful flavor and lovely scent. Time to dust off the ol' rice cooker! Freshly squeezed orange juice is the way to go! FYI: I was out of oranges and basmati rice when I prepared this last time so I used honey tangerines and jasmine rice instead! Really good!

Categories     Dessert

Time 1h

Yield 10 serving(s)

Number Of Ingredients 14

1 cup orange juice
1/2 cup dried cranberries
1/2 cup honey
2 sprigs of fresh mint
1 cup half-and-half
1 cup milk
1/3 cup raw sugar
1/4 vanilla beans or 1/2 teaspoon pure vanilla extract
2 tablespoons orange zest, finely minced
3 eggs, beaten well
1 cup orange juice
3 cups basmati rice, cooked and still warm
1/2 cup dried cranberries (I used orange essence dried cranberries from Trader Joe's)
10 fresh mint sprigs

Steps:

  • ORANGE/CRANBERRY GLAZE: Place the orange juice and cranberries in a small saucepan. Bring to simmer over medium heat and reduce mixture by half. This should take about 15 minutes. Stir in the honey.
  • Rub the mint leaves vigorously between your fingers to release the natural oil then stir into the glaze.
  • Let mixture stand 10 minutes, then remove the mint.
  • PUDDING: In a medium size saucepan, place the half and half and milk. Add the raw sugar, vanilla bean or extract and orange zest.
  • Bring to a simmer over medium heat, stirring continually until the sugar is dissolved. Place the eggs in a medium mixing bowl. Now {{slowly}} pour the hot milk liquid into the eggs while whisking constantly until the liquid is absorbed. Next, whisk in the orange juice and stir in the hot rice and dried cranberries.
  • Pour the mixture back into the saucepan and cook over medium heat until the mixture becomes hot and slightly thickened, approximately 3-4 minutes. Keep stirring constantly to avoid scorching.
  • Preheat oven to 350 degrees. Spray or butter a 9x9 inch baking dish.
  • Pour the warm pudding into the prepared baking dish and bake in oven for 15 minutes, or until the pudding is {{softly}} set (the mixture should "jiggle" when dish is shaken.).
  • Use an ice cream scoop to portion out the pudding. Drizzle the prepared orange/cranberry glaze over each serving and garnish with fresh mint leaves if desired.
  • Each serving is approximately 7 ounces.

ENGLISH PUDDING WITH CRANBERRIES AND WALNUTS (RICE COOKER RECIPE

English Pudding With Cranberries and Walnuts (Rice Cooker Recipe image

For Harry Potter fans -- a great pudding for a Harry Potter party that is also made in the rice cooker -- served with the English custard sauce included or with Bird's Custard Sauce. To make this you need a large (10 cups) rice cooker. Recipe source: Rice Cooker Cookbook

Provided by ellie_

Categories     Dessert

Time 1h24m

Yield 8-10 serving(s)

Number Of Ingredients 14

1/2 cup hot water
1/2 cup light molasses
2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 1/2 cups flour
2 cups cranberries (frozen, thawed are fine)
1/2 cup walnuts, chopped
2 cups milk
1/4 cup sugar
1 teaspoon cornstarch
5 egg yolks
1 1/2 teaspoons vanilla

Steps:

  • Set up your rice cooker for steaming by placing a small trivet or wire cooking rack in the bottom of the rice bowl. Fill the bowl 1/4 to 1/3 full of hot water and then close the cover and set for the regular cycle. If the water boils before you are ready to steam your pudding, turn the switch to "keep warm" and then when you are ready switch back to cooking.
  • Grease or coat the inside of a 1 1/2 quart round melon-shaped tin pudding mold with a clip-on lid with butter-flavored Pam spray.
  • In a large bowl combine all the pudding ingredients in the order given with a rubber spatula to fold in ingredients until evenly moistened.
  • Scrape batter into prepared mold, filling it 2/3 full, snap on the lid. Set mold on the trivet or rack in the bottom of the rice cooker, making sure it is covered and tipped. Close cover and reset the cooker for the regular cycle to bring back to a boil, if necessary. Steam for one hour, checking to make sure the water doesn't boil off. Check pudding for doneness -- it will feel firm to the touch and it should be puffed, rising to fill mold and a cake tester (or use a toothpick) inserted in center will come out clean. Unplug machine.
  • Using oven mitts transfer mold from the steamer to a wire rack and remove the lid. Let stand for a few minutes and then turn upside down to unmold pudding on a serving plate.
  • Serve warm cut into wedges with custard sauce (recipe follows).
  • To make the custard sauce:.
  • In a medium saucepan over medium heat scald milk. Set aside.
  • In a large bowl or food processor combine sugar and cornstarch.
  • Whisk in the egg yolks and vanilla. Beat with a whisk or process until light colored and foamy. Whisking constantly or with the food processor running add the hot milk to the mixture. Pour custard sauce back into the saucepan.
  • Cook over medium-low heat, stirring constantly with a whisk until thickened and smooth and the sauce coats a wooden spoon (5 minutes). DO NOT BOIL.
  • Pour sauce into a serving bowl and let cool to room temperature.
  • Refrigerate, covered, until serving time and then serve cold over the pudding with a little vanilla around each pudding wedge.

WHITE CHOCOLATE RICE PUDDING WITH DRIED CRANBERRY COMPOTE

White Chocolate Rice Pudding with Dried Cranberry Compote image

Categories     Milk/Cream     Chocolate     Fruit     Rice     Dessert     Vegetarian     Kid-Friendly     Cranberry     Chill     Bon Appétit     Small Plates

Yield Serves 6

Number Of Ingredients 11

4 1/2 cups whole milk
2/3 cup long-grain white rice
2/3 cup sugar
1 tablespoon vanilla extract
1/4 teaspoon salt
2 large egg yolks
3 tablespoons whipping cream
4 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1 tablespoon grated orange peel
3/4 teaspoon ground cardamom
Dried Cranberry Compote

Steps:

  • Combine first 5 ingredients in heavy large saucepan. Cook over medium-low heat until mixture thickens and rice is very tender, stirring occasionally, about 1 hour.
  • Reduce heat to low. Whisk egg yolks and cream in small bowl. Gradually whisk in 1/2 cup rice mixture; return to same pan and cook 2 minutes, stirring constantly (do not boil). Remove from heat. Add chocolate; stir until melted. Stir in orange peel and cardamom. Transfer pudding to bowl; cover and chill until cold. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Spoon pudding into bowls. Top with Dried Cranberry Compote.

Tips:

  • Choose the right rice: Short-grain rice, such as Arborio or Carnaroli, is the best choice for rice pudding because it has a high starch content, which makes it creamy and tender.
  • Soak the rice before cooking: Soaking the rice for at least 30 minutes before cooking will help it absorb the milk and other liquids more evenly, resulting in a more creamy pudding.
  • Use whole milk: Whole milk will give your rice pudding a richer, creamier flavor than skim or low-fat milk.
  • Don't overcook the rice: Overcooked rice will be mushy and unpleasant. Cook the rice until it is tender but still has a slight bite to it.
  • Stir the pudding frequently: Stirring the pudding frequently will help prevent it from sticking to the bottom of the pot and will also help it cook evenly.
  • Add flavorings: You can add a variety of flavorings to your rice pudding, such as vanilla extract, cinnamon, nutmeg, or dried fruit. Get creative and experiment with different flavors to find your favorites.
  • Serve the pudding warm or cold: Rice pudding can be served warm or cold. If you are serving it warm, let it cool for a few minutes before serving so that it doesn't burn your mouth. If you are serving it cold, chill it in the refrigerator for at least 2 hours before serving.

Conclusion:

Rice pudding is a delicious and versatile dessert that can be enjoyed by people of all ages. It is easy to make and can be customized to your own taste. Whether you like it plain or with a variety of toppings, rice pudding is a classic dessert that is sure to please everyone.
