RICOTTA PIE (OLD ITALIAN RECIPE)

Ricotta Pie (Old Italian Recipe) image

This is an old Italian recipe for a pie with a sweet crust--just like from the old country. My in-laws are Italian and they say that this is the best pie. It is always requested for Christmas. Mini chocolate bits and lemon rind can be mixed into the batter.

Time 3h

Yield 24

Number Of Ingredients 13

12 large eggs eggs
2 cups white sugar
2 teaspoons vanilla extract
3 pounds ricotta cheese
¼ cup miniature semisweet chocolate chips, or to taste
4 cups all-purpose flour
5 teaspoons baking powder
1 cup white sugar
½ cup shortening, chilled
1 tablespoon shortening, chilled
4 large eggs eggs, lightly beaten
1 teaspoon vanilla extract
1 tablespoon milk

Steps:

  • Beat the 12 eggs, 2 cups sugar and vanilla extract together in a large bowl. Stir in the ricotta cheese and the chocolate chips, if using (see Cook's Note). Set aside.
  • Combine the flour, baking powder, and 1 cup sugar together. Cut in 1/2 cup plus 1 tablespoon shortening until the mixture resembles coarse crumbs. Mix in 4 beaten eggs and 1 teaspoon vanilla extract. Divide dough into 4 balls, wrap in plastic, and chill for at least 30 minutes.
  • Preheat oven to 325 degrees F (165 degrees C). Grease two deep-dish pie plates.
  • Roll out 2 of the balls to fit into the pie pans. Do not make the crust too thick, as it will expand during cooking. Do not flute the edges of the dough. Roll out the other 2 balls of dough and cut each into 8 narrow strips for the top of the crust. (Alternately, you can use cookie cutters and place the cutouts on the top of the pies.)
  • Pour the ricotta filling evenly into the pie crusts. Top each pie with 8 narrow strips of dough or cookie cut-outs. Brush top of pie with milk for shine, if desired. Place foil on the edge of crust.
  • Bake in preheated oven for 20 to 30 minutes; remove foil. Rotate pies on the rack so they will bake evenly. Continue to bake until a knife inserted in the center of each pie comes out clean, 25 to 30 minutes more. Cool completely on wire racks. Refrigerate until serving.

EASTER RICOTTA PIE

Easter Ricotta Pie image

Provided by Marie

Number Of Ingredients 9

1 uncooked pie crust, either homemade or a good quality store bought one
1½ lbs. of ricotta *** IMPORTANT NOTE: Make sure you drain your ricotta good! You don't want it to be wet, make sure you get all the excess moisture out or else it will affect the cooking time and texture. You could drain it overnight in the fridge or a couple of hours before you put it together or just look for a drier ricotta, not one that is soaking in water.
¾ c. sugar
5 large eggs
1 tablespoon vanilla
½ teaspoon cinnamon, plus some extra for sprinkling on top
zest of one orange
½ cup of mini, semi sweet chocolate chips
½ cup diced candied orange peel, either store bought or homemade

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl with an electric mixer, beat the ricotta with the sugar until very smooth.
  • Add the eggs, 1 at a time, beating well after each addition.
  • Beat in the vanilla and cinnamon.
  • Stir in the candied fruit, orange zest and chocolate chips.
  • Pour the filling into the unbaked pie shell.
  • Place onto rimmed baking sheet for ease of pulling it out of the oven.
  • Sprinkle the top with cinnamon and swirl it with the tip of a knife.
  • Bake the pie for 45 minutes, or until ricotta is set and toothpick comes out clean.
  • Let cool down and refrigerate.

Tips:

  • To ensure a smooth and creamy filling, it's essential to use high-quality ricotta cheese. Look for fresh ricotta with a rich and velvety texture.
  • For a more decadent filling, use a combination of ricotta and mascarpone cheese. This will result in a richer and creamier filling.
  • If you don't have ricotta cheese on hand, you can substitute it with cottage cheese. However, cottage cheese has a slightly different texture and flavor, so the final product may not be as creamy.
  • For a crispy crust, make sure to preheat your oven to the right temperature before baking the pie. This will help the crust brown evenly.
  • Don't overfill the pie crust. The filling should come up to the top of the crust, but it shouldn't be overflowing.
  • To prevent the filling from curdling, temper the eggs before adding them to the ricotta mixture. To temper eggs, whisk them together in a bowl while slowly adding hot milk. Once the eggs are tempered, you can add them to the ricotta mixture without worrying about them curdling.
  • If you're using fresh fruit in your pie, make sure to toss it with a little bit of sugar and flour before adding it to the filling. This will help prevent the fruit from releasing too much water and making the filling soggy.
  • For a finishing touch, you can sprinkle some powdered sugar on top of the pie before serving.

Conclusion:

With its creamy filling, crispy crust, and delicious toppings, ricotta pie is a delightful treat that's perfect for any occasion. Whether you're making it for Easter, a family gathering, or just a special treat, this pie is sure to be a hit. With so many variations to choose from, you can customize the pie to your own liking and create a truly unique and memorable dessert.
