1 teaspoon olive oil, plus 1 tablespoon, divided
2 (8.5-ounce) jars sun-dried tomatoes, drained
1 1/2 packed cups fresh basil leaves
1/2 cup grated Parmesan, plus 3/4 cup
1/4 pound pancetta, diced
1 medium onion, diced
2 garlic cloves, minced
4 bunches asparagus, trimmed and cut into 1-inch pieces
1 (15-ounce) container whole milk ricotta cheese
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cups shredded whole milk mozzarella cheese
2 tablespoons butter

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add 1 teaspoon olive oil. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes for dried pasta or 2 to 3 minutes for fresh pasta. Drain pasta.

  • Put oven racks in upper and lower thirds of oven and preheat oven to 425°F.

2 teaspoons grated lemon peel

3 sprigs fresh savory, leaves chopped
2 sprigs fresh tarragon, leaves chopped

2 cups heavy cream
freshly grated nutmeg
3 tablespoons fresh chives, finely chopped

6 large shallots, peeled and minced

1 softball-size head of radicchio, halved, cored and cut into 1/2-inch slices

4 tablespoons unsalted butter, or herb oil
3 large cloves garlic, peeled and minced

3 cups whole milk
1/2 teaspoon grated nutmeg
1 cup Gruyère cheese, grated
1 cup Fontina cheese, grated
2 tablespoons best-quality truffle oil (optional)
2 9-ounce boxes of no-boil lasagna sheets
1 baseball-size ball of smoked mozzarella, sliced
1 cup fresh Parmesan, grated

Steps:

  • Preheat oven to 350. Place a large sauté pan over medium-high heat and add 1/4 cup of the olive oil or herb oil. When it begins to shimmer, add half of the shallots and cook, stirring occasionally, until translucent. Add mushrooms and toss to coat, then cook until they begin to color but are still plump, approximately 12 to 15 minutes. Add white wine to deglaze pan and allow to cook down into a syrup, approximately 5 to 7 minutes. Put the mushrooms into a large bowl and reserve.
  • Meanwhile, in another bowl, toss the radicchio with 1/4 cup olive oil or herb oil and season with salt and pepper. Spread the strips out onto a baking pan and place in the oven until the strips are lightly browned around the edges, approximately 15 minutes. Combine with mushrooms and reserve.
  • Make the béchamel. Place a saucepan over medium heat and melt the butter. When it foams, add the rest of the shallots and cook until they begin to turn translucent. Add the garlic and stir to combine, then cook until the garlic has started to soften. Sprinkle flour over the top and stir to combine, then cook gently until the mixture has turned light brown and gives off a nutty scent, approximately 10 minutes. Add milk to the mixture, whisking all the while, until the sauce is thick and creamy. Add the nutmeg and 1/4 cup of grated Gruyère and 1/4 cup of grated Fontina, then stir to combine. Season to taste with salt and pepper.

4 cups cooked vegetables (choose 2 or whatever combo you like, asparagus and mushroom, zucchini and spinach, broccoli and carr)
4 1/2 tablespoons butter
1 medium onions or 1 medium onion, chopped
1 1/2 tablespoons salt, plus
1/4 teaspoon salt
15 no-boil lasagna noodles
2 1/2 cups milk
1 cup canned chicken broth
6 garlic cloves, smashed with the side of a knife
5 tablespoons flour
fresh ground pepper, to taste
1 1/4 cups grated parmesan cheese
1/2 lb Fontina cheese, grated (or provolone, 2 1/2 cups)

Steps:

  • Heat 2 Tbs. butter over medium-high heat in a large skillet.
  • Add onion; cook until soft and golden brown, about 5 minutes. Set aside.
  • Mix 1 1/2 Tbs. salt and 2 quarts very hot tap water in a 13-by-9-inch lasagna pan.
  • Add noodles and soak until soft and pliable, 10 minutes.
  • Drain and stack loosely. (Noodles tend to stick together as they dry, but pull apart easily.).
  • Make Creamy Parmesan Sauce: Microwave milk, broth and garlic in a 1 quart microwave-safe container on high power until steaming hot, about 8 minutes. (Or slowly heat in a medium saucepan over medium-low heat.)
  • Fish out garlic; discard.
  • Melt 2 1/2 Tbs. butter over medium heat in a large saucepan; when foaming subsides, whisk in flour and continue to cook, whisking constantly, until well blended.
  • Pour in milk mixture all at once and whisk vigorously until sauce is smooth and starts to bubble and thicken.
  • Stir in 1/2 cup Parmesan, 1/4 teaspoons salt and pepper to taste.
  • Remove from heat; place plastic wrap directly on the sauce's surface.
  • Adjust rack to upper-middle position and heat oven to 425 degrees.
  • Smear 1/4 cup of the sauce over bottom of baking dish.
  • Assemble the next 4 layers in the following order: 3 noodles, 2/3 cup sauce, 1/4 of the onions, 1/2 of one of the cooked vegetables (alternating each layer), 1/2 cup fontina and 2 Tbs. Parmesan.
  • Assemble final layer with remaining noodles, sauce and cheeses.
  • Seal with foil and bake until bubbly, about 35 minutes.
  • Remove foil, then broil until cheese is spotty brown, 5-7 minutes longer.
  • Let stand 10-15 minutes before serving.

1 large sweet onion, chopped
1/2 pound sliced fresh mushrooms
1 garlic clove, minced
1 can (15 ounces) tomato sauce
1 can (6 ounces) tomato paste
1/4 teaspoon pepper
4 cups shredded part-skim mozzarella cheese, divided
1 jar (15 ounces) Alfredo sauce
1 carton (15 ounces) ricotta cheese
2-1/2 cups frozen peas, thawed
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 package (9 ounces) no-cook lasagna noodles
Fresh basil leaves and grated Parmesan cheese, optional

Steps:

  • In a Dutch oven, cook the beef, onion, mushrooms and garlic over medium heat until meat is no longer pink, breaking it into crumbles; drain. Stir in the tomato sauce, tomato paste, pepper and 2 cups mozzarella cheese; set aside., In a large bowl, combine the Alfredo sauce, ricotta cheese, peas and spinach., Spread 1 cup meat sauce into a greased 13x9-in. baking dish. Layer with 4 noodles, 1-1/4 cups meat sauce and 1-1/4 cups spinach mixture. Repeat layers 3 times. Sprinkle with remaining mozzarella cheese. salt
4 tablespoons unsalted butter
1/3 cup heavy cream
2 ounces italian Fontina cheese, diced
1/4 cup freshly grated parmesan cheese

Steps:

  • Clean and snap ends off of asparagus, Cook asparagus.
  • While asparagus is cooking, prepare the sauce.
  • Melt the butter in a medium-size skillet over medium heat.
  • Add the cream and fontina cheese.
  • Cook, stirring until the cheese melts and the cream has thickened and reduced by half--1 to 2 minutes.
  • Season slightly with salt.
  • Drain the asparagus and pat dry with paper towels.

2 1/2 pounds thin asparagus, trimmed and washed
4 tablespoons unsalted butter
Freshly ground black pepper
Freshly grated nutmeg
1/3 cup grated Gruyère (see note)
3/4 cup finely minced or slivered prosciutto
2 tablespoons minced parsley
3 eggs, beaten
3 to 4 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 350 degrees. Bring a large pot of generously salted water to a boil. Add the asparagus and cook until crisp-tender. Drain and cut into 1-to-1½-inch lengths. Return the asparagus to the pot. Add the butter and season with salt, pepper and nutmeg. Set over low heat and stir to melt the butter. Remove from the heat.
  • Turn the asparagus and the melted butter into a 9- or 10-inch pie plate. Arrange in an even layer. Sprinkle with the Gruyère, prosciutto and parsley. Pour the beaten eggs on top, gently shaking the pan to distribute.
  • Top with the Parmesan and bake until the eggs are set into a custard and a golden-brown crust forms on top, about 35 minutes. Serve hot or warm.

1/3 cup butter, cubed
1/2 cup all-purpose flour

  • In a large saucepan, cook asparagus in a small amount of water until crisp-tender, about 7 minutes; drain and set aside. In another large saucepan, melt butter. 2 1/2 lbs medium asparagus, ends trimmed, stalks peeled, and cut in half.
1 lg vidalia or sweet onion, peeled, cut in half, and thinly sliced.
3T extra-virgin olive oil
2T unsalted butter
1/4c fresh-squeezed lemon juice
2tsp grated lemon peel
Salt
Coarsely ground black pepper
3 fresh savory sprigs, leaves chopped
2fresh tarragon sprigs, leaves chopped
For the parmigiano sauce:
1c freshly grated parmigiano-reggiano cheese
2c heavy cream
Freshly grated nutmeg
3T fresh chives, finely chopped
1lb fresh or dry lasagna noodles
1/2 lb gratee fontina cheese 1/2lb grated mozzarella cheese

Steps:

  • Preheat to 450.Place the asparagus and onions on a large baking sheet. Drizzle with olive oil and dot with butter.Sprinkle lemon juice and zest on top, season with salt and coarsely ground black pepper. Mix the vegetables well with your hands, making sure they are evenly coated with the seasonings.Bake until soft and just starting to brown, about 20 minutes. When the vegetables are tender and aromatic,remove them from the oven and sprinkle with savory and tarragon. Toss to combine the heat of the vegetables will wilt and concentrate the flavors of the herbs. Lower the oven to 425. In a small saucepan, stir the parmigiano cheese into the cream and mix well. Simmer gently over low heat until the cheese is melted and the sauce is fairly smooth(there will be a slight graininess to the sauce because of the texture of the cheese). Season with nutmeg,pepper and a pinch of salt.Add the chives and stir. If using fresh pasta, cook the lasagna sheets in a large pot of boling, salted water until tender, about 2 minutes. If using dry noodles, cook them accordng to the package directions. Drain the noodles and rinse them with cold water, then lay them out in one layer on a towel to dry. To Assemble: Lightly coat an 8-by-8 baking dish with olive oil. Layer the botom with pasta, and follow with a layer of asparagus and onion and a thin layer of grated fontina and mozzarella cheese. Season lightly. Add another layer of pasta, and top with more asparagus, half of the parmigiano cream sauce,and another thin layer of fontina and mozzarella cheeses. Repeat until you use up the ingredients, except the parmigiano cream,ending with a layer of pasta. Pour the remaining parmigiano cream on top letting it run down the sides a bit. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and continue to bake until the top is golden and bubbling, about an additional 15-20 minutes. Remove from oven and let rest for 10 minutes before cutting. Serves 6
