My father loves bananas and pecans, so for his birthday this year I whipped up a special treat for him: two of his favorites, wrapped into one, and made into individual loaves so he could easily freeze the extras and have his birthday banana bread whenever he wanted. (Coconut extract helps to bring out the fresh banana flavor - trust!) The flavor is better a day later.

¾ cup chopped pecans
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
1 ½ cups very ripe, mashed bananas
1 cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
½ teaspoon coconut extract
2 tablespoons lemon juice
½ cup light butter, at room temperature

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spread the pecans onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 45 minutes. Watch the nuts carefully as they bake, they burn quickly. Once toasted, set the nuts aside to cool to room temperature.
  • Raise the oven temperature to 350 degrees F (175 degrees C). Spray 2 mini loaf pans with cooking spray.
  • Combine the toasted pecans, flour, baking soda, baking powder, and salt in a bowl. In a large bowl, mix the bananas, sugar, eggs, vanilla and coconut extracts, lemon juice, and butter together with a fork or an electric mixer on low speed. Stir the flour mixture into the banana mixture, and pour the batter into the prepared loaf pans, filling them about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the middle of a loaf comes out clean, about 30 minutes. Let the loaves cool in the pans for 5 minutes before turning out onto a rack to finish cooling. Wrap cooled loaves in plastic wrap.

2 cups graham cracker crumbs
½ cup white sugar
1 teaspoon ground cinnamon
½ cup butter, melted
3 (8 ounce) packages cream cheese, softened
1 ¼ cups white sugar
3 eggs, room temperature
½ teaspoon vanilla extract
½ cup pecan liqueur
1 cup sour cream
¼ cup confectioners' sugar
1 teaspoon pecan liqueur
1 cup ground pecans
½ cup graham cracker crumbs
1 ½ tablespoons white sugar
½ teaspoon ground cinnamon
¾ cup pecan halves

Steps:

  • Combine 2 cups graham cracker crumbs, 1/2 cup white sugar, 1 teaspoon cinnamon, and melted butter or margarine. Press firmly into the bottom of a 10 inch springform pan.
  • In a large bowl, blend the cream cheese and 1 1/4 cup white sugar with an electric mixer at medium speed until well blended. Add the eggs, one at a time, blending well. Add vanilla extract. Add 1/2 cup liqueur, and blend for 5 minutes. Pour the filling on top of the crust
  • Preheat the oven to 350 degrees F (175 degrees C). Bake for approximately 1 hour. The cake should be golden brown, and will have risen to the top of the pan. Turn off the heat, and let cool in the oven for 2 1/2 hours. When cool, remove the rim of the springform pan.
  • In a small bowl, mix the sour cream, confectioners' sugar, and 1 teaspoon liqueur together. Spoon onto the top of the cooled cheesecake.
  • In a small bowl, combine the finely ground pecans, finely ground graham cracker crumbs, 1 1/2 tablespoons white sugar, and cinnamon. Sprinkle the pecan topping on the cheesecake. Carefully press the pecan topping into the sides of the cheesecake. Garnish the top and sides with pecan halves.

1 cup sifted cake flour, (not self-rising), plus more for pan
1/2 teaspoon baking soda
1/4 teaspoon baking powder
Pinch of ground cloves
1 very ripe large banana, mashed (about 1/2 cup)
1/4 cup buttermilk
1/2 teaspoon pure vanilla extract
1/2 cup firmly packed dark-brown sugar
1 large egg
1/4 teaspoon salt
1/4 teaspoon ground cinammon
1/3 cup chopped toasted pecans
Confectioners' sugar, for dusting
Sweetened whipped cream, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 6-by-2-inch round cake pan. Line bottom with parchment paper; butter, and dust with flour. Set aside. Into a bowl, sift flour, baking soda, baking powder, salt, cinnamon, and cloves. In another bowl, whisk banana, buttermilk, and vanilla.

1-3/4 cups crushed pecan shortbread cookies
3 tablespoons butter, melted

2 packages (8 ounces each) cream cheese, softened
1 package (8 ounces) reduced-fat cream cheese
1/2 cup sugar
1/4 cup plus 2 tablespoons packed brown sugar, divided
1 teaspoon vanilla extract
2 tablespoons spiced rum, optional

ground cardamom 1/8 tsp
ground ginger 1/2 tsp

non-dairy cream cheese 16 ounces
firmly packed light brown sugar 3/4 cup
ground cinnamon 3/4 tsp
dark rum 1/2 cup
cornstarch 2 tbsp
salt 1/4 tsp

Steps:

  • Make the oven-roasted bananas Preheat the oven to 325°F. Place the unpeeled bananas on a roasting pan and roast in the center of the oven for 15 to 20 minutes, until the bananas are soft, the skins are dark brown, and some juice is seeping out.
