6 Tbsp. extra-virgin olive oil, divided, plus more for serving
Juice of 1 lemon
1 Tbsp. fig jam
1 Tbsp. white balsamic vinegar or white wine vinegar
Kosher salt

Categories     Peppers

Time 20m

Yield 8 serving(s)

Number Of Ingredients 2

4 red bell peppers
olive oil flavored cooking spray

Steps:

  • Heat oven to 450F degrees.
  • Wash peppers and cut in half.
  • Remove seeds and stems.
  • Place upside down (skin side up) on a cookie sheet coated with olive oil spray.
  • Bake for 10-15 minutes or so, until skin of pepper is seriously black.
  • Make sure there are no sparks or actively burning ashes on the peppers and place peppers in a brown bag for about 10-15 minutes. This steams the peppers so the skins easily peel off. Rinsing peppers takes away all the roasted flavor, so don't let me catch you doing that.
  • Let cool so you can touch them.
  • Skin will peel off easily.
  • Cut halves into strips, or however you need them to be cut.
  • Now you know how to roast a red pepper!
  • Good for: Chicken, cheese sauces, tomato sauces, topped on foccacia bread, or a million other things!
  • You can also roast a pepper by placing it directly on the burner of a gas stove (NOT ELECTRIC!) turning with tongs every few minutes till skin is black. Continue with paper bag step.

ROASTED AND MARINATED BELL PEPPERS

Roasted and Marinated Bell Peppers image

While you're making these, grill other vegetables, such as portobello mushrooms, zucchini, and fennel, as well. Brush with oil and season with salt and pepper before grilling. Serve them all on a platter with the vinaigrette drizzled over the top.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 8

6 tablespoons extra-virgin olive oil, plus more for grill
3 yellow bell peppers
3 red bell peppers
2 large garlic cloves, minced
2 tablespoons red-wine vinegar
1 1/4 teaspoons finely chopped thyme
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper

Steps:

  • Brush grill with oil; heat to medium hot. Grill peppers until blackened, 8 to 12 minutes. Let peppers cool in a paper bag. Peel and seed, saving juices. Cut into 1-inch strips.
  • In a bowl, combine garlic, vinegar, thyme, salt, pepper, and any pepper juices. Gradually whisk in oil. Toss peppers with vinaigrette, and arrange on a platter to serve.

Tips:

  • Choose ripe, firm bell peppers for roasting. Look for peppers that are brightly colored and have smooth, unblemished skin.
  • Cut the peppers into even-sized pieces so that they roast evenly. For a more uniform shape, cut the peppers into strips or quarters.
  • Toss the pepper pieces with a little olive oil and salt before roasting. This will help them to brown and caramelize.
  • Roast the peppers at a high temperature (450°F) for 20-30 minutes, or until they are tender and slightly charred.
  • Transfer the roasted peppers to a bowl and cover them with plastic wrap. This will help them to steam and soften.
  • Once the peppers are cool enough to handle, peel and seed them. You can also remove the stems if you like.
  • Use roasted bell peppers in salads, sandwiches, pasta dishes, pizzas, and dips.

Conclusion:

Roasted bell peppers are a versatile and delicious addition to many dishes. They are easy to make and can be enjoyed hot, cold, or at room temperature. With their sweet and smoky flavor, roasted bell peppers are sure to please everyone at your table. So next time you're looking for a healthy and flavorful side dish or ingredient, give roasted bell peppers a try!
