ROASTED CHILE SALSA

Categories     appetizer

Time 2h

Yield 36 servings

Number Of Ingredients 10

6 28-ounce can whole tomatoes with juice
18 roast poblano chiles
1 1/2 cups fresh cilantro leaves (or more to taste!)
3/4 cup chopped onion
3 clove garlic, minced
3 whole jalapeno, quartered and sliced thin, with seeds and membrane
3/4 teaspoon ground cumin
3/4 teaspoon salt
3/4 teaspoon sugar
1 1/2 whole limes, juiced

Steps:

  • Roast the poblano chiles one-by-one over the flame of your stovetop, using metal tongs to hold them, until the skin is totally charred. (If you don't have a gas stove, you can use an outdoor grill OR place them on a baking sheet directly under your oven's broiler.) When the skin is totally blackened, place the chiles in a large resealable plastic bag and seal the bag to allow the chiles to sweat for a good 20 minutes. Remove the chiles and use a knife to scrape off most of the blackened skin. Slice the chiles in half lengthwise, and scrape out the seeds and membranes.
  • Divide the ingredients into 3 batches so they will fit into a 12-cup processor
  • Combine whole tomatoes, roast chiles, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor.
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

Yield Serves 4 to 8

Number Of Ingredients 17

For the marinade
4 large ripe purple or red plums (about 1 pound), chopped
2 garlic cloves, minced and mashed to a paste with 1 teaspoon salt
1 tablespoon Oriental sesame oil
1/4 cup soy sauce
1/2 cup fresh orange juice
1/4 cup white-wine vinegar
3 tablespoons sugar
1 tablespoon minced seeded fresh jalapeño pepper (wear rubber gloves)
1 tablespoon minced peeled fresh gingerroot
1/2 teaspoon dry mustard
8 whole chicken legs (about 4 1/2 pounds)
Plum Chili Salsa
For garnish
ripe plum wedges
lime wedges
whole fresh mint leaves

Steps:

  • Make the marinade:
  • In a food processor purée the plums, the garlic paste, the oil, the soy sauce, the orange juice, the vinegar, the sugar, the jalapeño, the gingerroot, the mustard, and black pepper to taste until the mixture is smooth. In a large saucepan bring the marinade to a boil, simmer it, stirring occasionally, for 10 minutes, or until it is reduced to about 2 cups, and let it cool.
  • In a large shallow dish arrange the chicken, pricked in several places with a fork, in one layer, pour the marinade over it, reserving 1/4 cup for the salsa, and let the chicken marinate, covered and chilled, turning it once, for at least 1 hour or, preferably, overnight. Transfer the chicken to an oiled rack set over a foil-lined roasting pan, spoon the marinade over it, and roast the chicken in the upper third of a preheated 450°F. oven for 30 to 35 minutes, or until it is cooked through.
  • Make the salsa while the chicken is roasting.
  • Arrange the chicken on a heated platter, garnish it with the plum wedges, the lime wedges, and the mint leaves, and serve it hot or at room temperature with the salsa.

Categories     main-dish

Time 39m

Yield 4 servings

Number Of Ingredients 15

2 tablespoons corn oil
4 bone-in chicken breast halves (about 10 ounces each), skin on
2 teaspoons chili powder
Kosher salt
Juice of 2 limes
2 tablespoons honey
1/4 cup chicken stock
2 Tablespoons butter
3 medium tomatoes, roughly chopped
1/2 to 1 jalapeno, stemmed and minced with seeds
1/2 medium red onion, grated
1 teaspoon kosher salt
1 clove garlic, peeled
2 tablespoons extra-virgin olive oil
1/2 cup chopped fresh cilantro, leaves and stems, divided

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a large ovenproof skillet over medium-high heat. Add the oil and heat until shimmering. Season the chicken with chili powder and salt, to taste. Lay the chicken in the skillet skin side down and cook until brown, about 4 minutes. Turn the chicken, transfer the pan to the oven, and cook until firm, basting occasionally with the pan drippings, 15 to 20 minutes.
  • While the chicken cooks, make the fresh tomato salsa: Toss the tomatoes with the jalapeno, onion, and the 1/2 teaspoon salt. Smash the garlic clove, sprinkle with the remaining salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Stir the paste into the salsa with the olive oil and 1/4 cup of cilantro.
  • When chicken is cooked through, transfer the pieces to a plate and cover with foil to keep warm. In the meantime, add the lime juice to the pan. After 1 minute, add the honey along with the chicken stock to heat through. Remove pan from heat and stir in reserved 1/4 cup cilantro and butter.
  • To serve, divide the chicken among 4 plates, drizzle with pan sauce, and spoon some salsa over and around.

ROASTED CHICKEN LEGS WITH PLUM CHILI SALSA

Roasted Chicken Legs With Plum Chili Salsa image

When we moved into our first house a few years ago, we were lucky enough to have the most fabulous italian plum trees. This was the first recipe I made that first summer with my plums. It is soooo good. I like dark meat chicken with the skin on (I am not ashamed!!!). But I'm sure you can make with white meat and save a few calories. It is easy and pretty quick, I hope you'll enjoy it!!

Tips:

  • Choose the right chicken legs: Look for chicken legs that are plump and have a good amount of meat on them. Avoid any chicken legs that are bruised or have any signs of damage.
  • Use a variety of spices: Don't be afraid to experiment with different spices when roasting chicken legs. Some popular options include garlic powder, onion powder, paprika, cumin, and chili powder.
  • Don't overcrowd the pan: When roasting chicken legs, make sure to give them enough space so that they can cook evenly. If you overcrowd the pan, the chicken legs will steam instead of roast.
  • Roast the chicken legs until they are cooked through: The best way to tell if chicken legs are cooked through is to use a meat thermometer. The internal temperature of the chicken should be at least 165 degrees Fahrenheit.
  • Make the plum chili salsa ahead of time: The plum chili salsa can be made up to 3 days ahead of time. This makes it a great option for a quick and easy weeknight meal.

Conclusion:

Roasted chicken legs with plum chili salsa is a delicious and easy-to-make dish that is perfect for any occasion. The chicken legs are roasted until they are crispy on the outside and juicy on the inside, and the plum chili salsa is the perfect finishing touch. This dish is sure to please everyone at your table.
