Tips:

  • Choose the right potatoes: Fingerling potatoes are the best choice for this recipe because they are small and have a thin skin that crisps up nicely in the oven. If you can't find fingerling potatoes, you can use small red potatoes or Yukon Gold potatoes.
  • Wash the potatoes thoroughly: Scrub the potatoes under cold water to remove any dirt or debris. This will help to ensure that the potatoes are evenly coated with the olive oil and seasonings.
  • Use a hot oven: Preheat your oven to 425 degrees Fahrenheit before roasting the potatoes. This will help to create a crispy outer layer and a tender, fluffy interior.
  • Toss the potatoes frequently: Toss the potatoes every 15-20 minutes while they are roasting. This will help to ensure that they are evenly browned and crispy.
  • Season the potatoes generously: Season the potatoes with salt, pepper, and garlic powder before roasting. You can also add other herbs and spices, such as rosemary, thyme, or paprika.
  • Roast the potatoes until they are tender: Roast the potatoes until they are tender on the inside and crispy on the outside. This will usually take about 25-30 minutes.

Conclusion:

Roasted fingerling potatoes with asparagus and green beans is a delicious and healthy side dish that can be enjoyed with a variety of main courses. The potatoes are crispy and flavorful, while the asparagus and green beans are tender and slightly sweet. This dish is also a great way to get your daily dose of vegetables.
