Time 45m

Number Of Ingredients 7

1 lb small red or yellow potatoes, halved if large
1 lb rainbow carrots, halved lengthwise
2 clove garlic, peeled and smashed with side of a knife
2 Tbsp extra-virgin olive oil
salt and pepper
juice from half a lemon
1 Tbsp minced basil

Steps:

  • 1. Toss potatoes, carrots, and garlic with the oil on a rimmed baking sheet; season with salt and pepper.
  • 2. Arrange in a single layer and roast in a preheated 400-degree oven until the vegetables are tender and starting to brown--about 40 minutes; toss halfway through cooking time.
  • 3. Remove from oven and squeeze lemon juice over top and sprinkle with minced basil. Enjoy!

Tips:

  • Choose the right potatoes: For best results, use a firm potato such as Yukon Gold, Russet, or Red Potatoes.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Toss the potatoes in oil and seasonings: This will help them crisp up and brown.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and fluffy on the inside.
  • Don't overcrowd the pan: Give the potatoes plenty of space so they can roast evenly.
  • Flip the potatoes halfway through cooking: This will help them brown evenly.
  • Roast the carrots separately: Carrots take longer to cook than potatoes, so it's best to roast them separately.
  • Serve the potatoes and carrots immediately: They're best when they're hot and crispy.

Conclusion:

Roasted potatoes and rainbow carrots are a delicious and easy side dish that can be enjoyed with a variety of meals. With a few simple tips, you can make sure your potatoes and carrots are perfectly roasted every time. So next time you're looking for a healthy and flavorful side dish, give this recipe a try.
