Time 50m

Yield 4 servings

Number Of Ingredients 10

1 1/4 cups sushi rice
2 teaspoons matcha (green tea powder)
Kosher salt
10 sheets roasted seaweed snacks (one 0.18-ounce package)
1 tablespoon rice vinegar
1/2 teaspoon sugar
3 tablespoons chopped pickled ginger
2 scallions, thinly sliced (white and green parts separated)
1 tablespoon toasted sesame oil
1 tablespoon toasted sesame seeds

Steps:

  • Put the rice in a fine-mesh sieve and rinse under cold water, stirring with your hand, until the water runs clear. Shake well to remove as much water as possible. Set the sieve over a bowl to continue draining, 5 minutes.
  • Transfer the rice to a medium saucepan and whisk in 1 3/4 cups water, the matcha and 1 teaspoon salt. Bring to a boil, then immediately reduce the heat to low. Cover and cook until the water is absorbed and the rice is tender, about 20 minutes. Remove from the heat and let sit, covered, 10 minutes.
  • Meanwhile, cut the seaweed snacks into matchsticks with kitchen shears. Mix the vinegar and sugar in a small bowl until dissolved.
  • Fluff the rice and gently fold in the vinegar-sugar mixture, pickled ginger, scallion whites, sesame oil, 2 teaspoons sesame seeds and salt to taste. Divide among bowls and top with the seaweed snacks, scallion greens and remaining 1 teaspoon sesame seeds.

Tips:

1. Choose the right rice: Short-grain rice, such as Japanese rice or sushi rice, is best for this recipe as it becomes sticky when cooked. 2. Use a cast-iron pan: A cast-iron pan will help to evenly distribute heat and create a nice crispy crust on the rice. 3. Toast the rice before cooking: Toasting the rice in a dry pan before cooking will help to bring out its flavor and give it a nutty aroma. 4. Use the correct ratio of water to rice: The ratio of water to rice is important for getting the right consistency. For this recipe, a ratio of 1:1.5 (rice to water) is ideal. 5. Cook the rice covered: Cooking the rice covered will help to create steam and evenly cook the rice. 6. Let the rice rest before serving: Once the rice is cooked, let it rest for a few minutes before serving. This will help the rice to absorb the remaining moisture and become fluffy.

Conclusion:

Roasted rice with green tea is a delicious and healthy side dish that can be served with a variety of dishes. It is a simple recipe to make and can be easily customized to your liking. With its nutty flavor and crispy texture, this roasted rice dish is sure to be a hit at your next meal.
