ROASTED SWEET POTATO PIE

Roasted Sweet Potato Pie image

Sweet Potato Pie is one of my husband's favorite pies. I found this recipe on a website called Grandparents.com. It is from a Betty Crocker recipe book. My husband said I could make this pie any time. I was a little worried because it isn't exactly his mother's recipe. I like it better because of baking the potatoes rather...

Time 2h30m

Number Of Ingredients 11

1 1/2 lb dark-orange sweet potatoes (about 2 medium-large)
1 crust for one-crust pie
1/2 c packed brown sugar
1/2 c granulated sugar
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
1/2 c butter, softened
1/2 c whipping cream
1 tsp vanilla extract
2 eggs

Steps:

  • 1. Heat oven to 400 degrees F. Line cookie sheet with foil. Place sweet potatoes on cookie sheet. Roast for 1 hour or until tender. Cut potatoes in half. Scoop out pulp into medium bowl; discard skins. Reduce oven temperature to 350 degrees F.
  • 2. Place pie crust in 9 1/2-inch glass deep-dish pie plate. Beat sweet potato pulp with electric mixer on medium speed until creamy. Add remaining ingredients; beat for 1 minute or until well blended. Pour filling into crust-lined plate.
  • 3. Bake for 1 hour 15 minutes or until knife inserted near center comes out clean. Cool completely on cooling rack, about 4 hours. Store in refrigerator.
  • 4. For a special topping on top of each slice of pie, fold flaked or shredded coconut into some sweetened whipped cream. NOTE: I put about 1/4 cup of cream of coconut in with the cream while whipping to enhance the coconut flavor.

Tips:

  • Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size. This will ensure that they cook evenly.
  • Roast the sweet potatoes until they are very tender: This will make them easier to mash and will give the pie a smooth, creamy texture.
  • Use a food processor or blender to mash the sweet potatoes: This will help to create a smooth, lump-free filling.
  • Add spices and flavorings to the sweet potato filling: This will help to enhance the flavor of the pie. Some popular spices and flavorings include cinnamon, nutmeg, ginger, and vanilla extract.
  • Don't overmix the pie filling: Overmixing can make the filling tough.
  • Bake the pie until the crust is golden brown and the filling is set: This will usually take about 45 minutes.
  • Let the pie cool completely before serving: This will help to prevent the filling from becoming runny.

Conclusion:

Roasted sweet potato pie is a delicious and nutritious dessert that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages. With its creamy texture and sweet flavor, roasted sweet potato pie is sure to be a hit at your next gathering.
