1/2 pound sliced bacon, cut crosswise into 1/2-inch-wide strips
1 teaspoon salt
1/2 teaspoon black pepper

3 scallions, thinly sliced, reserving sliced greens separately
2 tablespoons Sherry vinegar
1 tablespoon water
