ROASTED SWEET POTATOES WITH SMOKED PAPRIKA-HONEY BUTTER
Smoked paprika plays off the natural sweetness of the roasted sweet potatoes and gives the butter mixture a rich garnet color. Because of the sheer number of dishes available at Thanksgiving, we keep the serving size to a more modest one-half of a potato per person. You could also use small (4-oz.) sweet potatoes or cut the roasted potatoes crosswise into large pieces before drizzling with the butter mixture.

ROASTED SWEET POTATOES WITH SMOKED PAPRIKA
This is a simple way to put an enormous amount of flavor on a plate, and it is particularly delicious with roast chicken - or as a side dish for slab-bacon tacos with burned scallion crema. (Drizzle a little of the crema onto the potatoes just before serving, as if to recall the aioli served with patatas bravas in Spain.) As always when using paprika, smoked or plain, if you can't recall the last time you did so, it is time for a new jar. All spices go stale. Paprika does so quickly.

ROASTED SWEET POTATOES WITH SMOKED PAPRIKA
What's Thanksgiving dinner without sweet potatoes??? Here's an easy-peasy (and delicious!) change from those casseroles. Smoked paprika is a Spanish cousin to the more widely used sweet Hungarian paprika. It's made from pimiento peppers that have been dried and smoked over an oak fire, then ground into a fine powder. You'll sometimes see it called pimenton, smoked pimenton, Spanish paprika, or any variation of those names. You can always recognize this spice by its deep red color and powerful smoky aroma. Most sweet potatoes are huge, so figure 1/2 potato (or even 1/4) per person. I prefer the way the wedges look, so I cut them in quarters. This recipe is for 8 or 16, depending on what else you plan to serve.

SMOKED PAPRIKA SWEET POTATOES (PUREE OR MASHED)
Seriously, there aren't words to describe how delicious this is. I first had it in a local gourmet organic restaurant, and couldn't get over how delicious it was. I later found the recipe on the web and was surprised how simple it was. Buying some nice smoked paprika is a MUST, don't even bother trying it without it. The flavor from the smoked paprika combined with the sweetness of the potatoes makes the dish extraordinary. (Don't worry if your grocery store only sells "yams", in north America yams and sweet potatoes are the same thing)

Steps:
- Pierce washed potatoes, wrap in foil, place on baking tray in oven at 400 degrees for 1 hour or until very tender.
- When cooled just enough to handle, peel off the skin and cut into chunks that fit your food processor or extremely powerful blender.
- Melt the butter and the spices together in the microwave.
- Blend the potato with the melted spiced butter and the cream following the instructions of your processor or blender, serve when blended throughout.
- *I used an extremely high powered blender (a vita mix) and had to stop and stir while pureeing multiple times so as to not burn out the motor. If it is too thick, add some more cream or milk to get it to the consistency you want it. Feel free to add more smoked paprika if you enjoy the flavor as much as I do!
Tips: 3. Choose the right sweet potatoes: Look for firm, unblemished sweet potatoes that are about the same size so they cook evenly. 4. Roast the sweet potatoes at a high temperature: This will help them caramelize and develop a crispy exterior. 5. Use a variety of spices: Smoked paprika, garlic powder, onion powder, and cumin are all great options. You can also add a pinch of cayenne pepper for a little heat. 6. Toss the sweet potatoes with oil: This will help them roast evenly and prevent them from sticking to the pan. 7. Roast the sweet potatoes until they are tender: A fork should easily pierce through the center of the sweet potato. 8. Let the sweet potatoes cool slightly before serving: This will make them easier to handle and prevent them from breaking apart. Conclusion: 1. Roasting sweet potatoes is a simple and delicious way to enjoy this healthy vegetable. 2. With a few simple tips, you can roast sweet potatoes perfectly every time. 3. So next time you're looking for a healthy and easy side dish, give roasted sweet potatoes a try. 4. You won't be disappointed!
