Tips:

  • Choose the right tuna steak: Look for a steak that is at least 1 inch thick and has a deep red color. Avoid steaks that are thin or have a grayish tint.
  • Sear the tuna steak properly: Searing the tuna steak creates a delicious crust and helps to keep it moist and juicy. Be sure to sear the steak for only a few minutes per side, or it will become overcooked.
  • Use a good quality grapefruit: The grapefruit is a key ingredient in this recipe, so be sure to use a ripe, juicy grapefruit. Avoid grapefruits that are dry or have a bitter taste.
  • Don't overcook the grapefruit: The grapefruit should be cooked just until it is tender. If you overcook it, it will become mushy.
  • Add the tarragon at the end: Tarragon is a delicate herb, so it should be added to the recipe at the very end. This will help to preserve its flavor.

Conclusion:

This roasted tuna with grapefruit and tarragon is a delicious and easy-to-make dish that is perfect for a summer meal. The tuna steak is seared until it is cooked to perfection, and the grapefruit and tarragon add a bright and refreshing flavor.
