This roasted vegetable salad features Brussels sprouts, butternut squash and cauliflower with a zesty horseradish dressing.

Provided by Brittany Mullins

Categories     Salad

Number Of Ingredients 16

2 cups cauliflower florets (bite-size)
2 cups butternut squash chunks
3 cups Brussels sprouts (halved)
1 15 oz. can cannellini beans (rinsed and drained)
1/4 cup fresh pomegranate arils or dried pomegranate seeds
3 Tablespoons dried mulberries
4 cups thinly sliced Lacinato (dinosaur kale)
Olive or avocado oil (or spray)
Dressing
3 Tablespoons champagne vinegar*
1 Tablespoon prepared horseradish
1 clove garlic (minced)
2 teaspoons minced scallions
1 pinch crushed red pepper flakes
1 teaspoon sea salt
⅓ cup extra virgin olive oil

Steps:

  • Roast veggies: Heat oven to 400°F. Place cauliflower, butternut squash and brussels sprouts on a large baking sheet, spray with a little avocado oil spray or drizzle with oil, sprinkle with salt and pepper and toss to combine. Roast for 30-40 minutes or until veggies are until well caramelized and softened with a few golden brown spots. Stir once mid-way through the cooking process and watch closely so the veggies don't burn.
  • Prep dressing: While veggies are cooking, make the dressing: Combine all ingredients except the olive oil and whisk to combine. Slowly drizzle in the olive oil while whisking, set aside. Taste and add more olive oil, if needed.
  • Prep salad: Remove vegetables from oven and allow to cool to room temperature, then combine in a large bowl with the beans, kale and pomegranate seeds. Toss in the dressing to evenly coat everything. You may find that you don't need to use all of the dressing.
  • Serve: Portion into bowls, top with mulberries and serve.
  • Store: Salad will keep marinated for up to 2 days in the fridge.

Provided by carolinafan

Categories     Roast Beef

Time 9h25m

Yield 6 serving(s)

Number Of Ingredients 12

3 lbs boneless beef rump roast or 3 lbs beef tip roast, trimmed of fat
1 garlic clove, slivered
3 tablespoons horseradish cream
1 (7/8 ounce) package brown gravy mix
3 medium carrots, cut in half lengthwise and into 2-inch pieces
8 -10 medium potatoes, cut into pieces
1 celery rib, cut in half lengthwise and into 2-inch pieces
1/2 cup water
1/2 teaspoon salt
1 dash fresh coarse ground black pepper
2 tablespoons cornstarch
3 tablespoons water

Steps:

  • With tip of knife, make cuts in top of beef roast; insert garlic slivers. Spread beef with 1 tablespoon of the horseradish. Sprinkle with 1/2 teaspoon of the gravy mix. Place beef in 3-1/2 to 4-quart slow cooker. Arrange carrots around beef. Top with potatoes and celery.
  • In small bowl, combine 1/2 cup water, remaining gravy mix, salt and pepper; mix until well blended. Pour over vegetables.
  • Cover; cook on Low setting 8 to 9 hours.
  • Just before serving, remove beef and vegetables from slow cooker; place on serving platter and cover to keep warm.
  • In medium saucepan, combine cornstarch, 3 tablespoons water and remaining 2 tablespoons horseradish; blend well.
  • Pour juices from slow cooker into cornstarch mixture; mix well. Bring to a boil over medium-high heat, stirring constantly.
  • Cut beef into slices. Serve beef with vegetables and gravy.

Tips:

  • Choose the right vegetables: Root vegetables like carrots, parsnips, and potatoes are great for roasting, as are cruciferous vegetables like broccoli and cauliflower.
  • Cut the vegetables into uniform pieces: This will help them cook evenly.
  • Toss the vegetables with olive oil, salt, and pepper: This will help them brown and caramelize.
  • Roast the vegetables at a high temperature: This will help them get crispy on the outside and tender on the inside.
  • Make sure the vegetables are cooked through: You can check this by piercing them with a fork or knife. They should be tender but still have a little bit of bite.
  • Serve the vegetables immediately: Roasted vegetables are best enjoyed hot out of the oven.

Conclusion:

Roasted vegetables are a delicious and healthy side dish that can be enjoyed with a variety of meals. They are easy to make and can be tailored to your own taste preferences. With a little bit of planning, you can create a roasted vegetable dish that is both flavorful and nutritious.
