1/4 pound bulk spicy pork or Mexican-style sausage
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 pound American cheese, cubed
3/4 cup salsa
Tortilla chips or raw vegetables

Steps:

  • In a 1-1/2-qt. microwave-safe container, cook sausage, green pepper and onion on high for 1-2 minutes or until sausage is fully cooked; drain. Add the cheese and salsa. Cover and microwave on high for 1-2 minutes, stirring frequently until cheese is melted and mixture is smooth. Serve with tortilla chips or vegetables.

While it may not always look appetizing, this dip is always gone when we make it for parties or family events. Everyone asks for the recipe and can't believe how easy it is. Sometimes we substitute ground turkey for the ground beef and no one can tell the difference.

1 lb ground beef
1 (1 1/4 ounce) packet taco seasoning
1 (16 ounce) package Velveeta cheese
1 (16 ounce) jar medium chunky salsa (or salsa of your choice)

Steps:

  • Brown ground beef and add taco seasoning as directed on packet. We usually use a little less water though.
  • Chunk the Velveeta and add to crockpot.
  • Pour in jar of salsa and add the prepared meat.
  • Let melt together in the crockpot, stirring occasionally.
  • At times, we have been in a hurry and used the microwave to help speed up the melting process for the Velveeta. Then just add the melted Velveeta to the other ingredients in the crockpot to keep warm and melty for dipping!
  • We have also used Mexican style Velveeta and Pepper jack, and it was just as good. Feel free to experiment.

12 ounces Jimmy Dean sausage
10 ounces rotel Mexican tomatoes

Steps:

  • Cut Velveeta into small cubes.
  • Brown meat until fully cooked. Should be very little grease.
  • When meat is fully cooked slowly add cubes of Velveeta, while stirring frequently.
  • Turn burner to medium/high.

I made a TRIPLE BATCH OF THIS for our family reunion, and there was none left, in either of the 2 six quart crockpots. They really loved it. My family loves meat, and the mixture of the Jimmy Dean Sausage mixed with the ground beef really did the trick. I also made it for my husbands Christmas party at work. It too was a big hit at the party.

1 pound(s) ground pork sausage, ( your favorite brand)
2 pound(s) lean ground beef
1 can(s) 7 ounces green chili peppers
1 can(s) cream of mushroom soup
1 can(s) rotel tomatoes
3 pound(s) velveeta cheese, cubed
1 medium onion ,chopped
2 package(s) large white tortilla chips
- extra jalapeno's as a side(optional)

Steps:

  • Brown ground beef and pork sausage in a large pot or skillet, and drain off any excess fat.
  • Add cooked meat to crock pot, then add remaining ingredients. Stir to mix, add the velveeta, and stir to distribute throughout meat. Cover and heat on medium to low till cheese has melted.
