2 tablespoons lard or butter
2 cups long grain white rice
1 cup water
1 cup chicken (or vegetable broth)
8 ounces canned tomato sauce
10 ounces Rotel (canned tomatoes with chiles), drained

Steps:

  • Melt lard in a large skillet; add rice and cook, stirring constantly until lightly browned. Do not burn.
  • Once browned, add water and bring to a boil.
  • Once the water has mostly absorbed, add broth and cover over low heat.
  • Let simmer and cook for approximately 20 minutes. Stir often so that a crust doesn't form. If it does, do not scrape it.
  • Once the rice is fluffy, add drained Rotel (keep the juice) and tomato sauce. Stir.
  • If the rice isn't perfectly fluffy, add the reserved Rotel liquids, turn off heat and cover until the rice steams to perfection.

1 (8 ounce) can rotel, undrained
2 1/2 cups vegetable broth (see step 2 below)

Steps:

  • Drain Rotel, reserving liquid.
  • Add vegetable broth or water to Rotel juice to make 3 cups of liquid.
  • Combine rice, Rotel and liquid in large saucepan. Cover and bring to a boil. Reduce heat to the lowest setting and simmer 20 minutes. (Don't open the lid!).
  • Fluff rice with fork before serving.

4 strips bacon
1 cup long grain white rice
1 (10 ounce) can Rotel Tomatoes, mild or hot
1 onion, chopped fine
1 small green pepper, chopped fine
2 cloves garlic, crushed
1 cup chicken broth
2 cans green chilies
1 tablespoon butter

Steps:

  • Fry bacon in skillet until browned.
  • Remove from skillet, crumble, and set aside.
  • Do not remove bacon grease from skillet!
  • Melt butter in skillet and add onion, pepper and garlic.
  • Saute until onions are translucent.
  • Add the Rotel, green chiles and chicken broth and simmer approximately 5-10 minutes.
