This dish combines the versatile pork tenderloin, renowned for its lean and tender texture, with a delectable blend of sweet and tangy flavors. Steps:
- Preheat the oven to 450 degrees F.
- In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
- In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.

Tips:
- To ensure the pork tenderloin is cooked evenly, use a meat thermometer to check the internal temperature. It should reach 145°F (63°C) for medium-rare, 160°F (71°C) for medium, or 170°F (77°C) for well done.
- If you don't have a meat thermometer, you can also check the doneness of the pork tenderloin by making a small incision in the center. The meat should be slightly pink in the middle for medium-rare, or cooked through with no pink for well done.
- Let the pork tenderloin rest for 10-15 minutes before slicing and serving. This will allow the juices to redistribute throughout the meat, resulting in a more tender and flavorful dish.
- Serve the pork tenderloin with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple green salad.
Conclusion:
This recipe for Rubbed Pork Tenderloin with Dijon Apricot Mop Sauce is a delicious and easy-to-make dish that is perfect for any occasion. The pork tenderloin is juicy and flavorful, and the Dijon apricot mop sauce adds a tangy and sweet flavor. This dish is sure to be a hit with your family and friends.
