8 (1 ounce) squares bittersweet chocolate, chopped
¼ cup cream
2 tablespoons unsalted butter
½ cup chocolate cake crumbs
2 teaspoons dark rum
½ cup chocolate sprinkles

Steps:

  • Line a sheet pan with aluminum foil or parchment paper. Place chopped chocolate in a heatproof bowl.
  • In a saucepan, combine cream and butter. Place over low heat, and bring to a boil. Pour over chocolate, and stir until chocolate is melted and smooth. Stir in cake crumbs and rum. Set aside until firm, but not hard.

14 ounces semisweet chocolate, divided
1 cup heavy whipping cream
1/3 cup butter, softened
1 teaspoon rum extract
1/2 cup finely chopped pecans or walnuts, toasted

Steps:

  • Coarsely chop 12 ounces of chocolate; set aside. In a saucepan, heat cream over low heat until bubbles form around sides of the pan. Remove from the heat; add chopped chocolate, stirring until melted and smooth. , Cool to room temperature. Stir in butter and extract. Cover tightly and refrigerate for at least 6 hours or until firm., Grate remaining chocolate; place in a shallow dish. Add nuts; set aside. 400 g good-quality dark chocolate, coarsely chopped
125 ml thickened cream
2 tablespoons rum
375 g dark chocolate
1 (100 g) white chocolate chips

Steps:

  • Remember: when melting the chocolate DO NOT let your bowl touch the water.
  • Place the chopped chocolate and cream in a heatproof bowl over a saucepan half-filled with simmering water. Stir with a metal spoon until chocolate melts and the mixture is smooth. Stir in rum. Place in the fridge until the mixture is firm enough to roll into balls.
  • Line a trays with baking paper. Roll chocolate mixture into a ball ( you can vary the size but 2 teaspoons might be a good start size). Place on trays. Repeat until mixture is gone then place in the fridge for 1 hour or until firm.
  • When firm place the dark chocolate melts in a heatproof bowl over a saucepan half-filled with simmering water . Stir with a metal spoon until the chocolate melts and is smooth.
  • Divide the truffles into 2 batches this is so they will keep firm while working them. Remove 1 batch from the fridge. Use a fork to dip truffles 1 at a time, in the melted chocolate to coat. Gently tap the fork on the edge of the bowl to allow excess chocolate to drip off. Carefully place on the prepared tray. Repeat until all have been dipped with the remaining truffles and melted chocolate. Set aside for 10 minutes to set.
  • Place the white chocolate melts in a heatproof bowl over a saucepan half-filled with simmering water. Stir with a metal spoon until chocolate melts and is smooth. Use a fork to drizzle the white chocolate over the truffles. Place in fridge to set for 5 minutes then you can store in a container in the fridge or serve.

125 grams heavy cream (about 1/2 cup)
750 grams (about 26 ounces) milk chocolate, divided
15 grams butter (about 1 tablespoon)
40 grams raisins (about 1/8 cup)
60 grams dark rum, such as Mount Gay (about 1/4 cup)

Steps:

  • In a heatproof bowl set over simmering water, heat the cream until hot to the touch and turn off the heat. Meanwhile, chop 350 grams of the milk chocolate into small pieces. Add the chocolate and butter to the hot cream, and stir until the chocolate melts.
  • Place the raisins and rum in the bowl of a mini food processor or blender and process until the raisins are finely minced. Stir the raisin mixture into the chocolate mixture and set aside at room temperature for at least 6 hours or overnight to cool.
  • Using a 1 1/4-inch ice cream scoop, scoop balls of the rum raisin mixture and place them on sheet pans lined with parchment paper.
  • To make the tempered chocolate, chop the remaining 400 grams of milk chocolate and place 3/4 of it in a small glass bowl in the microwave for 20 seconds exactly. Stir the chocolate and continue to microwave for 20 seconds at a time, stirring in between, until the chocolate is smooth and shiny. Add the remaining 1/4 of the chocolate and stir until smooth. The chocolate should register 85 to 89 degrees F on a candy thermometer.
  • With 2 small spoons, pick up each ball and cover it with tempered chocolate. (You can also use your hands to coat them.) They can look a little messy and "truffle" like. Place the truffle back on the parchment paper. Continue to coat each of the balls until they're all coated with milk chocolate. Allow to sit for a few minutes until the chocolate hardens. Serve at room temperature.

I always make these around the holidays and everyone loves them, especially my co-workers! They look forward to them every year. They're rich, decadent, and delightfully simple to make. The only time consuming part is rolling the balls. They are worth it though!

pkg 3 8oz packages of baker's semisweet squares
Tbsp 12 tbsp of dark rum or southern comfort
Tbsp 6 tbsp of brewed coffee
oz 12 oz of unsalted butter, cut into 1" pieces
oz 1 14 oz bag of gingersnap cookies, finely crushed
oz 1 8 oz bag of pecans, finely chopped

Steps:

  • 1. In a double boiler, break up the chocolate squares. To the melting chocolate, add the pieces of unsalted butter, stirring often, until well blended with the chocolate. Add the coffee and rum, stirring well. Remove from heat when thoroughly mixed and add the ground gingersnaps. Mix well. Cover and chill until firm. About an hour and a half or so.
  • 2. In a small processor, (or finely chop by hand), process the pecans into tiny pieces suitable for rolling. You can also use powdered sugar, or toasted sweetened flaked coconut, or walnuts. Spread the nuts, sugar, etc. on a piece of foil or wax paper.
  • 3. Bring the chocolate mixture to room temperature, about 30-45 minutes to be able to handle the chocolate easily. Use a teaspoon to dig out the chocolate and form into 1" balls. Roll the balls in the chopped nuts or your choice of coconut or powdered sugar. I have tripled the basic recipe, which yields approx. 30 candies. The tripled recipe yields approximately 85-90 candies, depending on the size. Enjoy! (Most of the prep time includes chilling, bringing to room temperature, and rolling the candies).

COATING:
12 ounces milk chocolate, chopped
1 tablespoon shortening

Steps:

  • In a microwave-safe bowl, toss all raisins with rum. Microwave, covered, on high for 30 seconds; cool slightly., Place chocolate in a shallow bowl. In a small heavy saucepan, heat cream just to a boil. Pour over chocolate; let stand 2 minutes. Stir until smooth, then stir in raisins. Press plastic wrap onto surface of chocolate mixture. Cool to room temperature or until firm enough to shape., With cocoa-dusted hands, shape chocolate mixture into 1-in. balls. Place on a waxed paper-lined 15x10x1-in. baking pan. Refrigerate until very firm, about 30 minutes., For coating, in top of a double boiler or a metal bowl over barely simmering water, melt chocolate and shortening; stir until smooth. Dip truffles in chocolate mixture; allow excess to drip off. Place on a waxed paper-lined 15x10x1-in. baking pan. Refrigerate until set. Store in an airtight container.

This is my "go-to" holiday candy recipe. These truffles are so easy, but look like they came from a premiere candy maker! My mother always made rum cake for Christmas. This truffle recipe keeps those warm flavors and transforms them into bite-sized beauties!

1 box yellow cake mix (and required ingredients for making)
1/2 can(s) store-bought buttercream frosting
1 tsp rum extract
1/4 c butter, melted
3/4 c light corn syrup
1/2 c golden rum
14 oz milk chocolate dipping chocolate or bark
1/4 c finely chopped pecans

Steps:

  • 1. Prepare cake according to directions and let cool.
  • 2. In a large bowl, crumble cake and set aside. In a small bowl, mix butter, corn syrup and rum and set aside. In another small bowl, mix frosting and rum extract. Fold rum mixture into crumbled cake, then fold in frosting mixture. Place in refrigerator for 30 minutes.
  • 3. Roll cake mixture into 1-inch balls. Place in freezer for 20 minutes, or in refrigerator for 1 hour.
  • 4. Dip balls into melted milk chocolate bark to coat. While wet, decorate with chopped pecans (note: alternatively, you can drizzle with white chocolate and eliminate the nuts). Place in refrigerator for 20 minutes to set. Store in airtight container for one week. Makes approximately 4 dozen.
