This is a fast, delicious, beautiful tart I made to use leftover nut roll filling. So easy you can whip it up for a quick dessert and so impressive you'll be proud to serve it for guests, too. Take it over the top with jarred caramel sauce, heated and drizzled over a scoop of good vanilla bean ice cream--outstanding!

Time 2h20m

Yield 8

Number Of Ingredients 10

1 (9 inch) pie crust
2 cups chopped walnuts
½ cup dark brown sugar
2 eggs, divided
¼ cup butter, softened
½ teaspoon vanilla extract
1 (20 ounce) can apple pie filling
½ cup dried cranberries
1 tablespoon water
1 tablespoon Demerara sugar, or as needed

Steps:

  • Preheat the oven to 415 degrees F (210 degrees C). Line a baking sheet with parchment paper.
  • Arrange pie crust on the prepared baking sheet. Mix walnuts, brown sugar, 1 egg, butter, and vanilla extract together in a bowl. Spread the walnut filling over the pie crust, leaving a 1-inch border. Reserve 2 tablespoons of the filling in the bowl.
  • Arrange apple slices in a circular pattern over the filling. Sprinkle cranberries over the apples. Drop small amounts of the reserved walnut filling here and there over the apples. Fold crust over the filling, overlapping as necessary to form a rustic circle.
  • Beat remaining egg and water together to make egg wash. Brush edges of crust with the egg wash. Sprinkle Demerara sugar on top.
  • Bake in the preheated oven until the crust is browned and apples are bubbling, about 30 minutes. Place baking sheet on a cooling rack for 30 minutes. Lift up tart using the parchment paper and place directly on a cooling rack for 1 hour.
  • Run a large knife or angled cake spatula under the tart to release the parchment paper and transfer to a serving tray.

Yield 6 to 8 servings

Number Of Ingredients 15

Pastry:
1-3/4 cups all-purpose flour
3 tablespoons sugar
Pinch salt
3/4 stick cold unsalted butter, diced
1/3 cup cold lard, diced
3 to 4 tablespoons ice water
Filling:
3 cups Granny Smith apples, peeled and thinly sliced
3 cups Golden Delicious apples, peeled and thinly sliced
1 cup packed light brown sugar
1 cup chopped walnuts
1 cup fresh or frozen cranberries
1 stick unsalted butter, melted
Vanilla ice cream

Steps:

  • For pastry: Mix the all-purpose flour, sugar, and salt in a food processor. Pulse until mixture resembles coarse meal. With processor running add enough ice water to to gather into a ball. Wrap dough in plastic wrap and refrigerate at least 1 hour. On a floured surface and with a floured rolling pin, roll pastry into a 12 or 13-inch round. Don't trim ragged edges. Turn a large baking sheet upside down, mist lightly with cooking spray and place pastry on it. Preheat oven to 375 degrees with rack in the middle position. Combine Granny Smith and Golden Delicious apples and heap onto a pastry into a 9-inch circle. In a bowl, combine brown sugar, walnuts, cranberries and melted butter. Mix well and spread mixture evenly on top of the apples. Bring outer edges of pastry up and over to partially cover filling, pleating pastry as necessary to maintain a rough round circle. Bake 40 to 50 minutes until apples are tender and topping is crisp and bubbling. Cool tart on a rack until warm. Cut into wedges and top with vanilla ice cream.

FAY'S RUSTIC APPLE CRANBERRY TART

Fay's Rustic Apple Cranberry Tart image

Our neighbor's lawn mower broke down and we mowed her grass a couple of times. She brought this tart over as a thank you and it was really good! She even attached a recipe card to the bottom of the pan:) She said this won first prize in a contest on a local news station in 2010. Enjoy!

Number Of Ingredients 6

1 refridgerated pie crust (comes in pack of 2)
1 can(s) apple pie filling (21oz)
1 c fresh or frozen cranberries, chopped
1/4 c chopped walnuts, optional
1 tsp cinnamon
1 tsp sugar

Steps:

  • 1. Preheat oven to 400.
  • 2. Place crust in pie pan. Combine all ingredients except sugar. Spoon mix into the crust. Fold edges over the fruit, pleating so crust lies flat. Sprinkle sugar over crust.
  • 3. Bake 15 minutes at 400. Reduce temperature to 350 and bake for 40-45 minutes until bubbly and crust is golden brown.

Tips:

  • For a more rustic tart, use a blend of all-purpose and whole wheat flour. Whole wheat flour will give the crust a nutty flavor and a more crumbly texture.
  • If you don't have a tart pan, you can use a 9-inch pie plate instead. Just be sure to trim the excess dough from the edges.
  • To prevent the cranberries from bursting, toss them with a little bit of sugar before adding them to the tart.
  • If you're using frozen cranberries, be sure to thaw them before using.
  • Serve the tart warm or at room temperature. It's also delicious served with a dollop of whipped cream or a scoop of vanilla ice cream.

Conclusion:

This rustic cranberry apple tart is a delicious and easy-to-make dessert that's perfect for any occasion. The sweet and tart cranberries and apples are a perfect combination, and the flaky crust is the perfect finishing touch. Whether you're serving it for a special occasion or just as a weeknight dessert, this tart is sure to be a hit.
