This is a salmon version of a tuna casserole. You can use tuna in this as well. I made this up in college when I needed to make something that would use up stuff I had in the kitchen.

1 (16 ounce) package elbow macaroni
¼ cup butter, softened
1 tablespoon olive oil
1 small onion, minced
1 (6 ounce) can salmon, drained and flaked
1 tablespoon seafood seasoning (such as Old Bay®)
1 tablespoon red wine vinegar
2 ½ cups shredded Cheddar cheese
2 eggs, beaten
2 cups milk
½ cup vegetable stock
1 (14.5 ounce) can peas and carrots, drained
1 (8 ounce) can whole kernel corn, drained
salt and pepper to taste
3 slices day-old bread
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink. Transfer to a large bowl. Stir the softened butter into the macaroni.
  • Heat the olive oil in a skillet over medium heat; cook the onion in the oil until brown, about 5 minutes. Stir in the salmon and seafood seasoning and cook until warmed through, about 5 minutes more. Remove from heat and pour the red wine vinegar into the skillet and set aside to cool.
  • Mix together the Cheddar cheese, eggs, milk, and vegetable stock in a large mixing bowl. Add the salmon mixture, peas and carrots, and corn; mix. Stir in the macaroni. Season with salt and pepper. Spread into the bottom of the prepared baking dish.
  • Toast the bread and break into small pieces. Combine the toasted bread and Parmesan cheese in a food processor; blend until chopped into crumbs. Sprinkle over top of the dish.
  • Bake in the preheated oven until heated through, about 45 minutes. Allow to cool 15 to 20 minutes before serving.

1/4 cup vegetable oil spread or margarine
2 Tbsp. chopped onion
1 can (14-1/2 oz.) diced tomatoes, drained
1 can (7-1/2 oz.) salmon, drained, flaked
1/4 cup milk
2 Tbsp. chopped fresh parsley

  • Boil 6 cups water in medium saucepan. Stir in Macaroni; boil 7 to 10 minutes or until macaroni is tender. Remove macaroni from saucepan; drain.

2 pounds corkscrew or elbow macaroni, cooked
1/2 cup basil leaves, chopped
6 ounces smoked salmon
1/2 cup bread crumbs plus 1/2 to 2/3 cup
1 cup heavy cream
3 tablespoons Dijon mustard
1 box cream cheese, at room temperature
Salt and pepper, to taste
1/2 cup Parmesan cheese, freshly grated
1/2 stick melted butter
3 tablespoons parsley leaves, chopped
2 tomatoes, sliced

Steps:

  • Preheat oven to 420 degrees. In a bowl, mix together macaroni, basil, smoked salmon, and bread crumbs. In a blender combine cream, mustard and cream cheese, season with a pinch salt and pepper. 9 ounces salmon fillets
1 teaspoon salt, or to taste
½ teaspoon ground black pepper
1 (16 ounce) package elbow macaroni
½ cup butter
½ cup all-purpose flour
2 ½ cups 2% milk
1 ½ cups half-and-half
¾ pound shredded smoked Gouda cheese
½ pound shredded smoked Cheddar cheese
½ teaspoon garlic powder

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick cooking spray and set aside.
  • Place salmon in a 2-quart baking dish and sprinkle with salt and pepper.

1/4 cup butter
3 tablespoons all-purpose flour
1 3/4 cups milk
1/2 teaspoon salt

1 (12 ounce) carton cottage cheese
1 cup cheddar cheese or 1 cup American cheese, shredded
1 (16 ounce) can salmon, drained and flaked
2 eggs, beaten
1 1/2 cups soft breadcrumbs
2 tablespoons butter, melted
