Steps:
- Combine all ingredients except the salmon in a saucepan and bring to a boil.
- Turn down heat and simmer for a few minutes until syrupy.
- Turn oven to broil. Cover a large baking sheet with foil, it's messy.
- Place salmon on the foil and baste well with the sauce.
- Broil the salmon depending on thickness about 10-15 minutes until done.
- Baste a couple of times during cooking. If it starts to get crispy and a little bit black, that's good.
SAM THE COOKING GUY'S CEDAR PLANK SALMON
My neighbor's jokingly refer to this as Salmon Brulee - yum yum! This is very impressive looking when done, not to mention easy. You can buy untreated cedar planks at a lumber yard. It should be about an inch thick with at least an inch border. Keep a spray water bottle on hand, just in case of a flare-up. Really yummy served with warm croissants.

Steps:
- Soak plank in water 1 to 2 hours.
- Heat grill to medium.
- Place salmon on plank and rub top lightly with oil, and sprinkle well with salt and pepper.
- Cover salmon with brown sugar.
- Place board with salmon on heated grill and close lid.
- For a filet about an inch at its thickest and depending on how good your barbeque is, it will grill for about 10 - 15 minutes.
- The plank sides may flare up during cooking this is no big deal as long as you keep the salmon about an inch away from the edges.
- Remove and serve.
Tips:
- Choose the right salmon: Fresh, wild-caught salmon is the best choice. Look for salmon that is firm and has a vibrant color.
- Season the salmon simply: Salt, pepper, and a little bit of olive oil are all you need to bring out the natural flavor of the salmon.
- Cook the salmon gently: Overcooking will dry out the salmon, so cook it just until it is opaque in the center.
- Serve the salmon immediately: Salmon is best served immediately after it is cooked. You can garnish it with fresh herbs, lemon wedges, or a drizzle of olive oil.
Conclusion:
Salmon is a delicious and healthy fish that is perfect for a rainy day meal. It can be cooked in a variety of ways, and it is sure to please everyone at the table. With these tips, you can make a perfect salmon dinner that will warm you up on a cold, rainy day.
