Time 4h40m

Yield 4

Number Of Ingredients 9

⅓ cup soy sauce
⅓ cup brown sugar
2 tablespoons lime juice
2 tablespoons orange juice
1 tablespoon Thai-style sweet chili sauce
1 teaspoon chile-garlic sauce (such as Sriracha®)
3 cloves garlic, minced
¼ teaspoon curry powder
4 skinless, boneless chicken thighs

Steps:

  • Place the soy sauce, brown sugar, lime juice, orange juice, sweet chili sauce, chili-garlic sauce, garlic, and curry powder in a large plastic zipper bag. Seal and knead the bag with your fingers to mix all the ingredients and dissolve the sugar. Place the chicken thighs into the marinade, squeeze out the air from the bag, zip the bag closed, and refrigerate for 4 hours or overnight.
  • Preheat an outdoor grill for medium-low heat; lightly oil the grate.
  • Remove the chicken from the bag, pour the excess marinade into a small saucepan, and bring to a full boil for about 1 minute to sterilize the marinade.
  • Grill the chicken thighs until they are no longer pink in the middle and show grill marks, about 25 minutes, basting them generously with the sterilized marinade as they grill.

Categories     Chicken

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 8

1 teaspoon soy sauce
1 teaspoon barbecue sauce (if possible an asiatic one)
2 teaspoons minced fresh ginger
3/4 cup coconut milk
4 chicken drumsticks (we used chicken breast, skinless and de boned)
2 yellow plantains (peeled and cut into 2 cm thick slices)
1 sweet potato (peel and sliced)
1 banana leaf, Large, fresh (cut into 4 squares)

Steps:

  • In a bowl, whisk together the soy sauce, barbeque sauce (I used a Chinese one), ginger and coconut milk. Check the taste of the marinade adding more soy sauce, barbecue sauce or ginger to your taste.
  • Place the chicken, plantain and sweet potato in a large bowl and pour over the marinade. Marinate for 30 minutes.
  • Gently warm the banana leaf over a fire until the leaf is pliable (do not burn it), just 3 minutes. (Istead of banana leaf and baking sheet, you can use a baking mold with lid, it's not the same but it's better then nothing).
  • Cut the leaf into four large squares from 30 x 30 cm.
  • Place the chicken onto the banana leaf square and evenly divide the vegetables on top.
  • Pour any remaining marinade and fold the leaves around the chicken.
  • Tie the package and place them in a baking sheet (lined with baking paper).
  • Bake in a previously pre-heated oven at 180°C until the chicken is tender and completely done (around 1 hour).
  • Check the package occasionally to make sure they do not burn.

Tips:

  • To ensure the chicken is cooked evenly, use a meat thermometer to check that the internal temperature has reached 165°F (74°C).
  • If you don't have a meat thermometer, you can check if the chicken is cooked by piercing it with a fork. The juices should run clear, not pink.
  • For a smokier flavor, soak the chicken in a mixture of water and liquid smoke for 30 minutes before cooking.
  • If you don't have time to marinate the chicken, you can simply brush it with the marinade just before cooking.
  • To make the chicken extra crispy, cook it over high heat for the first few minutes, then reduce the heat to medium-low and continue cooking until the chicken is cooked through.
  • Serve the chicken with your favorite sides, such as rice, potatoes, or vegetables.

Conclusion:

Samoan BBQ chicken is a delicious and easy-to-make dish that is perfect for any occasion. With its flavorful marinade and crispy skin, this dish is sure to be a hit with everyone who tries it. So next time you're looking for a new and exciting way to cook chicken, give Samoan BBQ chicken a try. You won't be disappointed!
