Very hearty stew, full of flavors from the southwest....corn, tomatoes, picante! Very high vegetable content!

Number Of Ingredients 16

2 lbs beef stew meat, cut into 1-inch pieces
2 tablespoons vegetable oil
1 (10 1/2 ounce) can beef broth, diluted
1 cup water
1 (8 ounce) jar picante sauce
1 medium onion, cut into wedges
1/4 cup fresh parsley, chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon ground cumin
1 (16 ounce) can whole tomatoes, undrained and chopped
3 large carrots, scraped and cut into 1 inch pieces
3 ears fresh corn, cut into 1 inch pieces (I prefer to scrap the corn off the ears, much easier to eat!)
2 zucchini, cut into 1 inch pieces
1/2 cup water
2 tablespoons all-purpose flour

Steps:

  • Brown the beef stew meat in the oil in a large Dutch oven. Stir in the broth and the next 7 ingredients. Bring to a boil; cover, reduce heat, and simmer for 1 hour, stirring occasionally.
  • Add the tomatoes, carrots, corn, and zucchini; cover and simmer for 25 minutes or until the vegetables are tender.
  • Combine 1/2 cup water and flour; stir until smooth. Add the flour mixture to the meat mixture; cook over medium heat until thickened, stirring occasionally.

2 medium onions, chopped
2 tablespoons butter
1 garlic clove, minced
1 lb chicken, cubed
1 -2 jalapeno, seeded and minced
2 (15 ounce) cans hominy, rinsed well and drained
2 (15 ounce) cans great northern beans, rinsed well and drained
2 (14 ounce) cans chicken broth
1/2 cup lime juice
2 bunches cilantro, chopped and divided
1 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 cup pepper jack cheese, shredded
sour cream, if desired (to garnish)
tortilla chips, if desired (to garnish)

Steps:

  • Saute' onions, garlic, and chicken in butter until chicken is no longer pink.
  • Add chicken broth, hominy, beans, lime juice, 1 bunch of chopped cilantro, and spices. Bring to a boil. Lower heat and simmer for about 20 minutes.
  • Serve with pepper jack cheese and additional cilantro. Add sour cream and chips as garnish if desired.

2 tablespoons olive oil, divided
1 medium red bell pepper, chopped
½ medium onion, finely chopped
3 cloves garlic, finely minced
1 (15 ounce) can diced tomatoes
2 tablespoons all-purpose flour
1 ½ teaspoons smoked paprika
1 ½ teaspoons sweet paprika
1 teaspoon dried oregano
1 teaspoon ground cumin
½ teaspoon salt
¼ teaspoon pepper
1 pound beef stew meat
1 tablespoon butter
2 cups water
2 tablespoons red wine vinegar
¼ cup chopped pimento-stuffed green Manzanilla olives

Steps:
