Easy peasy and adjustable. These are good served hot, fresh from the oven, but I make them for us to take to work and eat there. They also freeze and reheat very well. I also used cubed ham if sausage isn't available. And if I have a lot of chopped green or spring onions left over from something, I use those as well as yellow or white onion. Feel free to play with the ingredients. I use 14 large eggs - adjust accordingly. Nuking the sausage ahead of time makes clean up way easier. I end up putting the eggs, baking mix, spinach, salt pepper in the Cuisinart then I just stir in the sausage and cheese.

1 (16 ounce) bag , chopped frozen spinach, defrosted
1 lb sausage meat or 1 lb ham, cubed
2 1/2 cups shredded cheese, of choice

1/2 cup baking mix or 1/2 cup flour
