Yield Serves 6

Number Of Ingredients 9

3 scallions, trimmed, sliced
1 (16-ounce) package frozen shredded hash brown potatoes, defrosted
12 ounces cooked breakfast sausages (about 16 sausage links), cut into ¾" pieces
¼ cup olive oil
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, plus more to taste
3 (packed) cups baby spinach
6 large eggs
½ cup shredded cheddar (optional)

Steps:

  • Cut 12 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 6 stacks. Line top pieces of foil with parchment paper cut to the same size.

  • Transfer packs with tongs to a flat surface and carefully open them (they will be full of hot steam). Top each pack with spinach, then crack 1 egg into the center of each and season with salt and pepper. Reseal, return to coals, and cook until egg whites are opaque but yolks are still runny, 4-5 minutes.

SAUSAGE HASH WITH APPLES & SAGE

Sausage Hash With Apples & Sage image

One of my favorite things to order when I go out to breakfast is hash - corned beef, roast beef or any other variation - which got me to thinking about trying to make it at home. After all, the ingredients are simple: As long as you've got some kind of protein, potatoes and onions, you're in business. And it makes a fast brunch or even light supper dish, with or without poached eggs.

Provided by Ben S.

Categories     100+ Breakfast and Brunch Recipes     Potatoes

Yield 4

Number Of Ingredients 11

2 tablespoons vegetable or olive oil
1 large onion, cut into 1/2-inch dice
1 pound Mild or hot Italian sausage, removed from its casing, crumbled
1 pound starchy potatoes (such as Idaho), cut into 1/2-inch dice
½ pound firm apples (e.g., Granny Smith), cut into 1/2-inch dice
2 tablespoons vegetable or olive oil
2 tablespoons ketchup
1 tablespoon Dijon mustard
½ teaspoon rubbed sage or thyme leaves
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper

Steps:

  • Heat 2 Tbs. oil over low heat in a 12-inch non-stick skillet (so potatoes don't stick). While skillet heats, prepare onion and Italian sausage as directed above. A few minutes before cooking, increase heat to medium-high. When oil starts to send up wisps of smoke, add onion and sausage; cook, stirring often, until golden brown. Meanwhile, dice potatoes and apples and toss with remaining oil. Transfer sausage mixture to a bowl and reserve.
  • Add potato mixture to empty skillet; cook, stirring only occasionally so they form a golden-brown crust, about 10 minutes. As potatoes cook, mix ketchup, mustard, dried sage and fresh parsley and 2 Tbs. of water. (Recipe can be prepared to this point up to 2 hours ahead. Spread hot potatoes on a large lipped cookie sheet; cover when cool. Return skillet to medium-high; add potatoes and re-crisp.)
  • Return reserved sausage mixture to skillet; stir in ketchup mixture, then season with salt and pepper. Cook, stirring frequently, until hash has nicely browned, about 5 minutes longer.

3 Tbsp butter
1 small onion chopped
1 c diced bell pepper
6 c hash brown potatoes
1 lb sausage
2 1/4 c milk
8 large eggs
1 tsp salt
1/4 tsp pepper
1/4 tsp nutmeg
2 tsp dijon mustard
2 c grated cheddar cheese
1 c parmesan cheese
1 tsp garlic powder
3 c bread crumbs optional

  • 1. Preheat the oven to 350 degrees F. Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray. Melt the butter in a large frying pan. Add the onion, bell pepper and sauté over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Sauté until soft, about 5 minutes. In a second frying pan, sauté the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan. In a large mixing bowl, combine the milk, eggs, salt, pepper, garlic, nutmeg and mustard, briskly to blend. To assemble, spread the onions, green pepper and hash browns evenly at the bottom of the greased dish..Add bread cubed if using. Distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar. Let sit in refrigerator overnight. Bake the next morning before breakfast. Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown. Be sure to save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar

Tips:

  • Choose the right sausage: For the best flavor and texture, use a high-quality sausage that is flavorful and has a good fat content. Breakfast sausage, Italian sausage, and chorizo are all popular choices.
  • Cook the sausage thoroughly: Sausage should be cooked to an internal temperature of 160°F (71°C) to ensure that it is safe to eat. Use a meat thermometer to check the internal temperature of the sausage.
  • Don't overcrowd the pan: When cooking the sausage, don't overcrowd the pan. This will prevent the sausage from cooking evenly and will make it more likely to stick to the pan.
  • Use a non-stick pan: A non-stick pan will help to prevent the sausage from sticking. If you don't have a non-stick pan, you can grease the pan with cooking spray or oil.
  • Add vegetables: Vegetables are a great way to add flavor and nutrients to your sausage hash. Some popular vegetables to add include potatoes, onions, peppers, and mushrooms.
  • Season the hash: Salt and pepper are essential seasonings for sausage hash. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Serve immediately: Sausage hash is best served immediately after it is cooked. This will ensure that the sausage is hot and crispy and the vegetables are tender.

Conclusion:

Sausage hash is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up leftover sausage and vegetables, and it can be easily customized to your liking. With a few simple tips, you can make a sausage hash that is sure to please everyone at your table.
