Yield 4

Number Of Ingredients 11

2 tablespoons vegetable or olive oil
1 large onion, cut into 1/2-inch dice
1 pound Mild or hot Italian sausage, removed from its casing, crumbled
1 pound starchy potatoes (such as Idaho), cut into 1/2-inch dice
½ pound firm apples (e.g., Granny Smith), cut into 1/2-inch dice
2 tablespoons vegetable or olive oil
2 tablespoons ketchup
1 tablespoon Dijon mustard
½ teaspoon rubbed sage or thyme leaves
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper

Steps:

  • Heat 2 Tbs. oil over low heat in a 12-inch non-stick skillet (so potatoes don't stick). While skillet heats, prepare onion and Italian sausage as directed above. A few minutes before cooking, increase heat to medium-high. When oil starts to send up wisps of smoke, add onion and sausage; cook, stirring often, until golden brown. Meanwhile, dice potatoes and apples and toss with remaining oil. Transfer sausage mixture to a bowl and reserve.
  • Add potato mixture to empty skillet; cook, stirring only occasionally so they form a golden-brown crust, about 10 minutes. As potatoes cook, mix ketchup, mustard, dried sage and fresh parsley and 2 Tbs. of water. (Recipe can be prepared to this point up to 2 hours ahead. Spread hot potatoes on a large lipped cookie sheet; cover when cool. Return skillet to medium-high; add potatoes and re-crisp.)
  • Return reserved sausage mixture to skillet; stir in ketchup mixture, then season with salt and pepper. Cook, stirring frequently, until hash has nicely browned, about 5 minutes longer.

Time 1h

Yield 25 links, 8 serving(s)

Number Of Ingredients 20

1 cup dried apple (Measured Loosely)
2 cups filtered water
1/2 cup old fashioned oats
2/3 cup vital wheat gluten
3 tablespoons nutritional yeast flakes
1/4 cup almond meal or 1/4 cup flour
1/2 cup brown rice, Cooked
1 tablespoon ground flax seeds
1 teaspoon sugar
1 teaspoon rubbed sage
1 teaspoon garlic powder
1 teaspoon lemon pepper
1/4 teaspoon ground thyme
1/8 teaspoon ground cloves
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon crushed fennel seed
1/2 teaspoon salt
2 tablespoons liquid from apples
1 tablespoon liquid smoke
1 teaspoon seasoned Chinese white rice vinegar

Steps:

  • Place apples and water in a medium saucepan on medium heat and cook for about 15 minutes. After they have cooked reserve left over liquid from cooking the apples. Spread the apples out and allow them to cool.
  • In a food processor pulse the oats a few times to break them up. Pour into a medium sized mixing bowl with the wheat gluten, nutritional yeast flakes, almond flour, brown rice, flaxseed, sugar, sage, garlic powder, lemon pepper, thyme, clove, pepper flakes, fennel and salt.
  • Put apples in the food processor and add the 2 tablespoons of the reserved apple water, liquid smoke and vinegar. If there was no water left from cooking the apples, just add water. Puree for 2 minutes. To this add the dry ingredients from the mixing bowl and process until it mixes together and forms a ball in the processor. Take out of processor and place back into the mixing bowl.
  • Preheat oven 300 degrees.
  • To make the sausages, measure out 1 tablespoon for each sausage link. A tip, rubbing some oil inside the tablespoon helps the sausage dough from sticking to the spoon. First roll the dough into a ball, then between your hands to get the shape started. Then place it on a piece of wax paper and roll into a 3 1/2 inch link.
  • Place them on a greased cookie sheet, spray the tops with a little oil, cover with aluminum foil loosely and place into the oven for 15 minutes. Turn them over, cover again and cook them another 15 minutes. Let rest for 5 minutes before eating.
  • These can be frozen and reheated in the microwave.

Tips:

  • Use a cast-iron skillet: A cast-iron skillet will help the sausage and potatoes get nice and crispy on the outside while staying tender in the inside.
  • Cook the sausage and potatoes in batches: This will prevent the pan from getting overcrowded and the ingredients from steaming instead of frying.
  • Don't overcrowd the pan: Trying to cook too much sausage and potatoes at once will result in steamed, not fried, ingredients.
  • Season the sausage and potatoes well: Don't be shy with the salt and pepper!
  • Use a variety of apples: A mix of sweet and tart apples will give the hash a complex flavor.
  • Add some greens: A handful of chopped kale or spinach will add some extra nutrients and color to the hash.
  • Serve with a fried or poached egg: This is a classic way to enjoy sausage hash, and it's a great way to get some extra protein in your meal.

Conclusion:

Sausage hash with apples and sage is a delicious and easy-to-make breakfast, lunch, or dinner. It's a great way to use up leftover sausage and potatoes, and it's also a versatile dish that can be customized to your liking. So next time you're looking for a quick and easy meal, give this sausage hash a try!
