Sauteed courgettes with chives is a simple yet flavorful dish that highlights the best of summer produce. Fresh, tender courgettes (also known as zucchini) are sliced and cooked briefly in a hot pan with olive oil until they're tender-crisp, while the addition of chives adds a delicate oniony flavor and freshness to the dish. Served as a side dish or even as a light main course, this recipe combines minimal ingredients and cooking techniques for maximum impact.

This has been adapted from a British cookbook called "Favourite Harvest Recipes - Traditional Seasonal Fare" and is slightly different to other potato cake recipes in that it includes baking powder. I have since added the garlic, spring onions and cheese to the original recipe to pep it up a notch, so here is the original recipe with my additions added in :) ZWT REGION: England.

Tips:
- Choose fresh, tender courgettes: Look for courgettes that are firm and have a deep green color. Avoid courgettes that are bruised or have blemishes.
- Slice the courgettes thinly: This will help them cook evenly and quickly.
- Use a large skillet or sauté pan: This will give the courgettes plenty of room to cook without overcrowding.
- Heat the oil over medium-high heat: This will help the courgettes brown and caramelize.
- Cook the courgettes in batches: If you overcrowd the pan, the courgettes will steam instead of sautéing.
- Stir the courgettes frequently: This will help them cook evenly and prevent them from sticking to the pan.
- Season the courgettes with salt and pepper: Add other seasonings, such as garlic powder, onion powder, or paprika, to taste.
- Cook the courgettes until they are tender and slightly browned: This should take about 5-7 minutes.
- Serve the courgettes immediately: They are best enjoyed hot and fresh.
Conclusion:
Sautéed courgettes with chives is a quick, easy, and delicious side dish that can be enjoyed with a variety of meals. The courgettes are tender and slightly browned, with a hint of sweetness from the chives. This dish is a great way to use up fresh courgettes from your garden, and it is also a healthy and nutritious choice.
